My favorites are:

Broccoli-Cheese Casserole

1 c. mayonnaise
1 can cream of celery soup, undiluted
2 eggs, beaten, at room temperature
2 pkgs (10oz each) frozen chopped broccoli, drained
¼ c. minced onion
1 c. grated sharp cheddar cheese
1 ½ tbsp. Worcestershire sauce
1 ½ tsp. kosher salt
Freshly ground black pepper, to taste
1 cup herb-seasoned stuffing mix
2 tablespoons butter
Grease a 2-quart glass or Pyrex casserole and set aside.
In a large bowl, combine the mayonnaise and soup, mixing well. Stir in the eggs and broccoli. Add the onion, cheese, Worcestershire sauce, salt and pepper. Place in the prepared casserole dish and top with the stuffing mix. Dot with butter. Bake at 325° for 45 minutes.
Serves 8-10.
This next recipe is the one served at my house every Thanksgiving. The leftovers, once chilled, can be sliced like a meatloaf. I like to top a couple of slices with some leftover turkey gravy and heat the whole thing in the microwave. What a snack!
Broccoli-Rice-Cheese Casserole

2 c. long-grain white rice, cooked
½ c. diced onion
½ c. diced green peppers
½ c. chopped celery
2 c. cheddar cheese, divided
2 10-ounce pkgs. frozen chopped broccoli, drained
1 can cream of mushroom soup
1 can cream of celery soup
Mix rice, onion, peppers, celery, 1 c. of the cheese and broccoli. Add soups and fold until combined well. Spread in greased 2 qt. casserole dish and top with remaining cup of cheese.
Bake at 350° for at least 30 minutes or until done. Take off cover and brown top a little.

here is an easy one for you...

2 pkgs. frozen broccoli (defrosted)
1 stick of butter or margarine
1 stack of Ritz crackers (smashed for crumbles on top of casserole)
1/2 block of Velveeta

Heat oven to 350 F.
Heat broccoli, 1/2 stick of butter and velveeta in a pot together. When cheese and butter have melted pour into a 9 by 13 casserole dish. Use the other half of butter and melt it seperately. When melted mix in with cracker crumbs. Top the casserole with the buttered crumbs. Bake in oven for about 30 minutes or until bubbling. Allow to cool and serve.

It's called a Chicken-Broccoli Divan:

Ingredients:

1lb fresh broccoli cut into 2-inch flowerets; cooked and
drained
11/2 cups cubed chicken or turkey
1 can Campbell's condensed Cream of Broccoli or Cream of
Chicken soup
1/3 cup Milk
2tbsp dry bread crumbs
1tbsp margarine or butter, melted.



*Preheat oven to 350 C in 10- by-16 Inch (25 x 15 cm) baking dish or 1.5 L casserole, arrange broccoli and chicken. In mixing bowl, combine soup and milk. Pour broccoli and chicken.

*In bowl, combine bread crumbs and margarine sprinkle over top. Bake 15 minutes or until hot.


TIP: You can substitute 1 pound (450g) fresh broccoli, cut into spears or 1 package (10 ounces/285g) frozen broccoli spears, cooked and drained, for the broccoli flowerets.


TIP: If you like, sprinkle 1/2 cup(125 ml) shredded Cheddar cheese or 2 tablespoons grated Parmesan cheese over soup mixture before topping with the crumb mixture.



Personally I enjoy it with the Cream of Chicken soup best. The Broccoli soup kind of overpowers it in my opinion. Also with the cheddar cheese. Just gives it it's "mmmm" appeal! I Hope you enjoy this recipe as I have.

Broccoli Rice Casserole

2 cups cubed broccoli, cooked until just BARELY cooked
(boil them in water until they are cooked but still crispy)
4 cups cooked rice
1/2 cup white wine
3 eggs
1 cup grated very sharp cheddar cheese
1/2 cup diced scallions
1/4 cup diced red pepper
1 cup sliced mushrooms
lots of freshly ground black pepper
1/2 cup grated Swiss cheese
paprika

Mix together the wine and eggs and beat until very foamy. Stir together the egg mix, the rice, the vegetables, the cheddar cheese and the pepper. Put in a casserole dish and bake at 350F for one hour (or until a knife comes out clean when you insert it in the casserole). Top with the Swiss cheese and sprinkle with paprika. Bake 5 more minutes to melt the cheese.
