Kosher salt and fresh ground black pepper. Anything more than that detracts from the meat, IMO.
If you have lame meat, you may need more seasonings. In which cas Montreal Steak Seasoning by McCormick is good.

Liberally sprinkle steak with McClintock's Meat Seasoning. Get a well seasoned cast iron skillet reall hot till it's smoking. Place a 1-1/2" Thick NY Steak in the skillet and don't touch it or move it for 4 minutes. Turn it and cook the other side for 4 minutes. Take it out and let it sit for about 15 minutes, to let the juices settle back in the meat. Cut and enjoy with a side of sauteed mushrooms, and a salad of Romaine with homemade blue cheese dressing.

I don't know if you can find this where you live, but it is extremely well worth requesting. It is called all-purpose "Alpine Touch" Montana's Special Spice. I swear I don't work for them, I moved clear to Missouri and make people send it to me now. You can go to www.alpinetouch.com. No joke - the best high end steak houses use this, my husband puts it on everything and you could make a shoe taste good with it. It does contain MSG though, but frankly it's worth it!

sirloin steak and all I use is coarse sea salt and cracked black pepper.
If I'm cooking them on a grill,l marinate them overnight in a blend of italian dressing and a ziploc bag.
If I'm cooking them inside, I cook them in peanut oil and nothing else. And cook them high to brown the outsides of it, then turn heat down and cook for 2-3 minutes on each side for rare to medium and 4-5 minutes for well done. Turning 1-2 times to prevent them from becoming tough..

#1 for the primo steak - sea salt and fresh cracked pepper
#2 for steaks that need a bit of tenderizing
24 hours ahead....make marinade and add to steaks
Marinade...
A1 or BBQ sauce (any really cuz when I am done with it you won't recognize it)
Dijon mustard
Red Wine
Fresh Garlic (lots as in TOO much!!)
My secret herb blend....tarragon, basil, oregano, etc etc use everything (I can't tell you all of it....that's why it's called SECRET silly)
Coat the steaks with the marinade, put them in a ziploc bag - wait 24 hours and BBQ....watch your neighbors come out of the woodwork as they follow their noses...
MMM BABY! It could be why my fiance loves me so much ;o)

Omg... Moore's Marinade is where it's at! I tried it and loved it on all types of meat. It imparts a wonderful flavor and tenderizes the meat wonderfully!
