Skirt steak. Preferably marinated in that yummy Jack Daniel's marinade. Cooked slow on the grill, medium rare. Served aside sliced avocados with a squirt of lime juice, and maybe some corn on the cob or my special potatoes ( diced potatoes in tin foil with cheese, onions, and butter, cooked on the coals).

Filet Mignon, medium rare, cooked on a charcoal grill, with blackening spices on the outside. Hmmmm.
(Ruth's Chris makes a pretty yummy filet, also).

Is strip steak the same cut as flank? Cause that is mine. Medium though. Grilled, with fajita seasoning.

A large, northern Mexican, well-marinated arrachera (skirt) steak cooked over a live charcoal mesquite-flavored grill, to a touch over medium, smothered in Argentinian "chimichuri" sauce.
(That and a clean heart will put you in Heaven!)
