I have some bananas that are over ripe and I don't want to make banana bread with them now but can I freeze them for later and if I can, should I smash them first?

Put enough for one recipe (3 medium bananas is about 1 1/2 cup) in a plastic freezer bag or freezer-proof container. No need to mash them. They will be quite mushy when you thaw them out for your recipe. I do this with my bananas and it works well.

Ripe bananas can be mashed and then frozen.

When mashing, add a little lemon juice to prevent the fruit from discoloring.

The mashed bananas can be placed in air tight freezer bag and stored in the freezer for up to two months.

You can use the frozen bananas in recipes such as salads and fruit shakes.

Or thaw them for use in breads, cakes and muffins.

Yes, just toss in the freezer whole, unpeeled. The peel will turn black, but the inside is fine. Thaw on the counter for 10 min or so, then pop off hte bottom end and squeeze the banan and juice out into a measuring cup like toothpaste. PERFECT for quick breads and muffins, pancakes and waffles!

yes ripe bannanas can be frozen the peel will turn completly black or dark brown but that doesn't matter the flesh of the bannana will retain it's flavor once they are toughed they are good for making ice cream or banna bread or just a thought pureed and make a bannas foster type dessert use your imagination

Sure! But they will have ruptured their cell wall and become watery as they defrost. Great for banana bread....or even better, banana ice cream!!

freeze them in the peel, don't mash first. they work good for banana bread

I usually freeze them, leave them out to defrost when I want to make bread, and then mash them. I think they get TOO mushy if you mash before you freeze.

if you freeze them they will thaw mushy, freezing any fruit destroys the cells and the only thing that the bananas will be good for is icecream

Yes, remove the peel and freeze. If you want to smashed them, that will work.
