When I go to the pub I like to eat cajun chicken but cant work out what is in the coating. I'm taking for granted that it's some sort of dry rub that they put on the chicken before cooking but I can't work out what it is.

Can anyone enlighten me?

CAJUN SEASONING

3 Tablespoons Black pepper
2 Tablespoons Garlic can be crushed or use paste
1 teaspoon Onion powder ( more convenient)
1 teaspoon Nutmeg or cinnamon (whatever your household prefers - we like cinnamon)
2 Tablespoons Parsley or Oregano - whatever your tastes (I can't stand parsley!)
4 Tablespoons Cayenne Pepper
2 Tablespoons chili powder

*You may wish to use a little brown sugar if you are going to BBQ but this is purely to your own tastes
* We try to use as limited amount of salt as possible but this is to taste.

.The Brighton Food Store in Brighton Grove at the top of Stanhope Street sells a cajun seasoning that matches very well with the seasoning used as a marinade at your local pub. In my view it is it better than most of the commercial"Cajun" seasoning

You will notice that all the previous recipes use dried ingredients or a lot of salt, don't do it

There are some pretty good mixes offered in your answers so far.

Interested to see how they might work out. Will try a few!

It might be a product called "Tony Chachere's cajun dressin" which is mainly salt, pepper(s), onion and garlic.

Its not easily available the uK but you can get it on Ebay, there is a guy who sells it on Ebay. Very addictive.

Maybe some of our american cousins can confirm this. They are obsessive about "cajun" cookery and all the various recipes. If all you want is the recipe for the seasoning I think it's available on the web- just do a google on "chachere's" or something.

Salt, red pepper, white pepper, black pepper, paprika, dried onion, dried celery, dried cajun, thyme, marjoram, parsley, garlic.

Change the amounts however you like. It is a rub, so rub it onto/into the chicken and let is sit for at least an hour before cooking. You can fry it, bake it, or best, grill it.

Musicman has 'dry Cajun' as an ingredient. I'm a Cajun and I don't know what that seasoning is! Can't hardly be a for real dry Cajun, can it?

Cajun Spice Seasoning Mix in a Jar

"A spicy and attractive gift and tastes great on potatoes, eggs, and meat."
Original recipe yield: 1 1/2 cups.

INGREDIENTS:
3/4 cup salt
1/4 cup ground cayenne pepper
2 tablespoons ground white pepper
2 tablespoons ground black pepper
2 tablespoons paprika
2 tablespoons onion powder
2 tablespoons garlic powder

DIRECTIONS:
While holding a pint canning jar at an angle, add ingredients to create a "sand art" look. The salt and cayenne may be divided into smaller portions and used to separate other spices. I found it simplest to use 7 cups--one with each spice in it--and add them to my jar with a spoon, as I want to create the special look.

Generally:

Black Pepper
Seasoning Salt (eg. Lawry's Salt)
Cayenne Pepper
Paprika
Garlic Powder
Onion Powder
Sugar - a little, it counterpoints the salty flavor(if you used regular salt instead of Lawry's you need to add it)

Add these to the rest in any amounts, or not, to suit your taste:
Oregano
Cumin
Basil

next time that you are at a grocery store,look at all the brands of Cajun seasoning,compare all of them, the ones here in Ky. are a dry rub....
