when they start to sprout roots they get a little more bitter use them at this point fresh or if you want to prolong the flavor you can make garlic butter or margarine by cooking in the fat for several minutes this can be used immediately or frozen to freeze let the melted fat set up and then place in a length of plastic wrap roll this into a log and once frozen you can unwrap use whatever amount you wish and then re wrap and throw the rest back in the freezer this will last at least three months

you can keep them in the fridge for a few weeks but eventually they'll start to sprout green shoots and they'll become bitter. Also, the cloves will dry out.
If you have purchased too much garlic to use you could try using a garlic press, pressing all of the garlic and adding a bit of kosher salt and a few tablespoons of olive oil. This will keep in the fridge in an airtight container such as a small jar. It's convenient to have. You can mix a small spoonful into some softened butter and spread it on bread or use it in any cooking, even spread it on steak of chicken or fish.
I love garlic.

Do Not store your garlic in the fridge, it needs a cool, DRY place to store. Keep as much of the skin on the bulb as you can, and store in a brown paper (lunch) bag, (do not use plastic), in the pantry, or cupboard away from heat, light and moisture. When it starts to sprout roots, just remove them, but it will make the garlic a little bitter when this occurs. Two to Three months is usually the shelf life for garlic bulbs.

As long as they are still firm they are still good. If they are hard or mushy, then it's time to toss them. Sometimes, you may get a little hard spot on a garlic-but if the rest of the garlic clove is find, just cut off the damaged part.

I've heard of braiding their stems (fresh from ground) like onions to store in cold storage for longer term, but haven't tried it. I find the kind from the store, sitting on a spice rack, start to turn bad (soften & darken) in 2-3 months.

They last for a good long time. They don't go "bad" in the sense that you'd get sick from eating them, but they either sprout or dry up.

garlic will stay fresh longer refrigerated, but they do eventually go bad.
if they are dry and rubbery when you try to peel them.. throw them away.

a good long time, if you buy them fresh. I'd guess and say a couple of months. They will dry up when they are too old.
