I absolutely LOVE blueberry pancakes. Here's my recipe:


INGREDIENTS:

* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/8 teaspoon ground nutmeg
* 1/8 teaspoon ground cinnamon
* 1 tablespoon white sugar
* 1 egg
* 1/2 cup plain yogurt
* 1/2 cup milk
* 2 tablespoons vegetable oil
* 3/4 cup fresh blueberries

DIRECTIONS:

1. Preheat griddle over medium heat. Stir together the flour, baking powder, nutmeg, cinnamon and sugar, set aside.
2. In a medium bowl, stir together the egg, yogurt, milk and oil. Gradually stir in the flour mixture, then fold in the blueberries.
3. Pour batter onto hot greased griddle, two tablespoons at a time. Cook over medium heat until bubbles pop and stay open, then turn over and cook on the other side until golden.

I follow the recipe on Bisquick for Melt-in-your-mouth pancakes. I also use more milk for thinner pancakes as directed. My family loves these with their favorite syrup. Make some extra so you have leftovers. Then take some chocolate frosting and spread it over each leftover pancake; put in the microwave for 30 seconds per pancake; sprinkle with powdered sugar. Enjoy!

i have my own special recipe for making pancakes for one sreving 1/2 cup flour 1/2 cup buttermilk and one large egg for a little kick try adding your favorite flavoring banna most nut flavorings are reall good or any fresh fruit pour batter in hot skillet or grill at a low to medium heat don't cook them too fast give the flour time to rise before turning mmmmmmmmmmmm

Bisquick sells small packets of their mix. I make their recipe. I am a plane jane when it comes to pancakes. Blueberries sound good though. I may have to try that soon.

I use a half-and-half mixture of regular white flour and whole wheat flour for a heartier flavor (I do the same with banana bread and zucchini bread too).

Add frozen berries immediately after pouring the batter into the pan. That way the juices won't bleed into the batter the way they do if you mix them in before pouring.

I like to add quick cook oats, cinnamon, raisins and smashed bananas. They are super good.

peaches, blueberries and raspberries in them - and then i mix chunks of the fruits, maple syrup, honey and lots of margarine and use that as my spread - so good
