You can leave them out on a dry day because of the moisture factor. After a few hours, though, it is best to put them in an airtight container and put in freezer. A fridge will soften them, as will just putting them in an airtight container and leaving them on the counter.

we often make cream puffs for the weddings, and we found that they are tastier when you freeze them with the filling. If you freeze just the shells they taste worse.

put them in the freezer wraped in saran wrapped individually,and place all of them in a freezer ziplock bag,take out as many as needed
