I am talking easy meals...other than soup,mac & cheese..sandwhiches,& salad..HELP

Recipes? How did it get to be worthwhile to actually cook for just one person? Bah! Read the package directions and pop the frozen whatever in the oven for the appropriate time (use a timer so you can be on the computer while it cooks), and forget "recipes."

I find it kinda useful to take and make like three meals at once and freeze or fridge the rest for the next day or two.
Example...1 lb ground beef becomes...
1stuffed green pepper
2 tacos
and maybe a hamburger that evening
I try to cook in an idea orientated way that way I can use the lb of beef up and not have the same leftovers for a week.
This concept will get your mind working as well to figure three ways do make fish or pork or anything.
Stuffed pork chop is an easy 1 person meal and chicken can be made easily for 1 person. I also find that one person meals are a great way to get some more vegetables in your diet. And if none of these ideas work cook for 2 and invite a friend.

This is very quick (less than 10 min.!), easy, delicious, and a little exotic too--definitely gets you out of that mac-n-cheese rut. Oh yeah, and it's inexpensive too. This is what I always have when my husband works late.

--3/4 cup plain couscous
--1 cup chicken broth
--dash of cooking oil, or use oil spray
--1 large garlic clove
--2 green onions, thinly sliced (reserve a little of the green for garnish)
--1/4 teaspoon ground coriander
--pinch turmeric (if you don't have any, you can use curry powder)
--pinch cayenne, optional
--salt and pepper to taste
--1/4 cup frozen tiny peas
--1/2 cup cooked shrimp (you can use cooked chicken here too, but add it nearly to the end or it will get dry and tough)
--slivered almonds, optional
--lime wedges, optional

Measure couscous. Heat broth in small saucepan. In small pan THAT HAS A COVER, heat oil/oil spray and saute garlic, green onion, and spices together and cook until onion starts to get soft. Add the hot broth and stir. Bring to low boil. Stir in peas, couscous, and salt to taste. Return to bare simmer and add shrimp/chicken. Stir, cover tightly, and remove from heat. Let sit 5 minutes. Fluff with fork and serve topped with almonds and/or scallions, with lime wedges to squeeze over.

BTW, you can add any veggies you like when you're sauteing. I've used red bell pepper, shredded carrot, pea pods, broccoli...they all tasted good.

Stir-fried beef with vegetables

1/4 lb beef steak ** 1/4 tsp sugar
1-2 tbs soy sauce ** dash ginger
1 tsp sherry ** 1/4 cup thinly sliced carrot
1 tsp oil ** 1 thinly sliced green onion
1/2 cup thinly sliced green beans
1/2 cup thinly sliced mushrooms

Thinly slice steak. Combine soy sauce, sherry, oil, sugar and ginger. Pour over meat and set aside to marinate a few minutes. Heat 1 or 2 tbs oil in a wok or frying pan. Add vegetables and stir-fry about 2 minutes until tender crisp. Remove from pan and set aside. Add meat to wok and stir-fry quickly, about 30 seconds. Return vegetables to pan, toss with meat and serve immediately.

(This is especially good over Jasmine rice!)

1 large mushroom
1 beef tomato
1 slice of cheese
garlic glove or little olive oil

grill mushroom /brush underside with a oil or rub with garlic
when cooked place slice of tomato on top and grill
then melt the cheese over the top

serve with salad

Here is ome try it everyday i eat baked potato for dinner.here i wrote for 7 potatoes for 7 persons you can decrease the number of potatoes and decrease the ingredients and it will become for 1 person.

TWICE BAKED POTATOES - MICROWAVE

4 baking potatoes
3 green onions, thinly sliced
2 tbsp. butter
1/2 c. hot milk
1/2 tsp. salt
Dash black pepper
Dash nutmeg
Dash paprika
4 slices bacon
2 tbsp. grated Parmesan cheese
2 tbsp. grated sharp Cheddar cheese

1. Arrange potatoes on microwave dish. Pierce with a fork in a few places.
2. Microwave, uncovered, for about 10 minutes at high power. Rearrange potatoes after 5 minutes, turn them over.

3. Place potatoes on counter, cover with a bowl and let stand for at least 7 minutes (potatoes will continue to cook).

4. Combine butter and green onions in a micro-safe dish. Microwave covered at high power for at least 1 1/2 minutes or until onion is soft.

5. Place bacon on paper towel on a micro-safe dish. Microwave, covered with paper towel at high power for 4-5 minutes or until almost crisp. Let stand for a minute. Crumble.

6. Cut potatoes in half, scoop out pulp.

7. Mash potatoes with butter and green onion mixture, milk or Half and Half and seasonings until light and fluffy. Add bacon.

8. Spoon potato mixture into shells. Arrange on micro-safe dish. Sprinkle with cheeses.

9. Microwave, uncovered at high power for about 5 minutes or until potatoes are hot and cheeses are melted. Rotate dish after half the cooking time if the microwave oven is not a rotating one.
