olive oil - in a saute pan
cut up an onion
4 tomatoes
eggplant
pees
carrots
garlic (1/4 tsp)
saute
If you want add mozzarella cheese on top and serve

"Chikn" & broccoli in peanut sauce
Stir together 2 tablespoons crunchy peanut butter, 1 tablespoon
reduced-sodium tamari or soy sauce, and 1 tablespoon orange juice or apple juice; set aside. Simmer 4 cups fresh broccoli florets in 3 cups water for 3 minutes and saute Quorn brand tenders according to package directions. Drain broccoli, and toss with quorn tenders and sauce.
