I think most dogs can live anything up to about 16 years, but you could look at the practical pet care web site for any info you need. I found them very helpful when my cockatiel became ill.
Here's a link for you to have a look, hope your pooch is ok.

The larger the dog the shorter the life span. Staffordshire Bull Terriers life span is between 12-14 years. Enjoy the time. Make sure you feed her food for senior dogs and make her comfortable... my family dog started slowing down 3 years before he passed away so dont worry you still have a few good years with her. Take Care

The most natural and healthy diet for humans is an omnivorous diet, and not a plant based diet, or a meat-based diet per se. The Paleo Diet can be very widely varied and omnivorous for the most part, but the most important thing is that it’s unprocessed, and avoids the worst foods that agriculture brought mankind… refined inflammatory vegetable oils, refined grains (some are worse than others), and sugar! Learn here https://tr.im/Jrf39
As you can see, the benefits of adopting a Paleo way of eating can be incredible! I’ve been eating 95% Paleo for the last 5-6 years and I’ve never felt better. I have dozens of friends that have adopted a more Paleo way of eating too, and have seen all sorts of health problems disappear, including eliminating acne and other skin problems, digestion problems, improving brain clarity, and of course, losing a lot of body fat!

Either dog should be fine, your description sounds like the ideal home for almost any dog! I might lean towards the Staffie just because the GSD will get a lot larger a lot faster and could easily knock over and injure a 4-6 year old.

Same as other dogs - at 12 your Staffy is getting elderly.
The avarage lifespan for most dogs is round 14 years - though mine lived 16 - after all its just an average.
I recommend talking to the vet about diet, as when they get old, sometimes you need to change their diets as it can become difficult for them to digest the normally protein rich dog foods.
Doing this will make the final few years much more pleasant for the both of you.

My friend who gave me My Zena, who is 4, her dogs lived to be about 10-12yrs. It depends on what kind of life they have lived. Love her while you got her. And don't be sad after she goes, because I'm sure that she loved you dearly. That is what is great about animals, they love you no matter what. So hold her tight while you can and show her that you love her with all your heart. If you would like I can send you a pics of my spoiled baby's. Email ..trashygodest@yahoo.com . OK ! Don't worry we all get old and slow down.

they r like ppl to an extent, it depends upon genetics or/aswell as environment. some can live to 16/17 yrs. if they are traditionally bred ie broad shoulders maybe less 12 is average to good. dont leave it til she is suffering too much, just a bit so she (like humans welcomes the sleep) plenty of love for now eh?

Mine will not last the night if she doesn`t stop barking at the lamp shade. Cod liver oil shoud make her a bit happier. It worked for a couple of my older dogs. She`s got a couple of years yet given love and care. Good luck.
