I could take the money with me when I fly to Pakistan, but a) it's a bit risky travelling with such a large amount of money. Secondly, if I were to take 30,000 GBP with me through the Airport here in Britain would I gest stopped? Or is there some law saying how much you can take out of the country when you fly? How can I find out the rules regarding this?

find a bank of Pakistan here in Britain and open an account it is accessible over there ! You will definitely get stopped and arrested trying to carry so much cash out of the country!

Don't take the money with you it's legal but not safe.
Don't use Western Union as you can't always trust the pakistani counterparties.
Don't use the banks they will rip you of with high exchange rates.
Try companies like afex.com or ruesch.com and negotiate the best rates you can get.
These 2 are known to me for several years, but as always buyers beware.

try western union money transfer
or most banks can do a transfer to an account of your choice
