I want something that's INSANELY YUMMY AND EASY TO MAKE.

chicken bites
An easy and tasty chicken appetizer.
INGREDIENTS:
2 egg whites
1 pound uncooked boneless chicken breasts
3 tablespoons chopped onion
10 water chestnuts
1 can (4 ounces) mushrooms, drained
2 tablespoons cornstarch
1/4 teaspoon salt
2 tablespoons soy sauce
1 tablespoon dry sherry
PREPARATION:
Beat egg whites until stiff peaks form; set aside. Rinse and pat dry chicken breasts, put through food grinder with onion, water chestnuts, and drained mushrooms. Stir in cornstarch, salt, soy sauce, sherry; fold in beaten egg whites.
Shape chicken mixture into small balls and fry in deep hot (about 360° to 375°) fat. Drain and serve with toothpicks and dip, if desired.
Makes about 48 appetizer balls.

I usually try to cook "fresh" things, but this is what I make to please everybody in the family when there's no time to spend at the stove. Do you live near a Trader Joe's? If so, they have these pre-cooked, pre-frozen breaded chicken "strips". Toss some of those in the oven and, 5 minutes before their "done" time, take them out, spoon about a tablespoon per chicken piece of jarred marinara sauce over, then top with shredded mozzarella. Return to oven until they're "melty".
Voila, chicken Parmesan as good or better than you can get in your average trattoria, and beats the heck out of Domino's Pizza.

P.S. Ideally serve sprinkled with some chopped fresh basil. A salad and garlic bread would be nice.

OK go to the store and get one of the lipton side rices called New Orleans Style Chicken Rice then cook some smoked sausage and mix together. Taste is a little spicy but very good and easy to fix. Also does not cost but about five bucks to make.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

try making a salad and some pita chips

For the salad:

cut up Tomato, Avocado, and red onion. (cubes)
Finely mince a clove of garlic
shred some Parmesan cheese.

Mix it all together and drizzle with olive oil...salt and pepper to taste.

To make pita chips:

Cut pita in four pieces
lightly coat both sides in olive oil
place on cookie sheet in the oven (at 350 degrees)

cook for 10 min. and flip.

anything's easy- if you go pick it up at a restaurant :)
if you want something country homestyle- buy those Hormel beef tips (already in the sauce) and boil some noodles. Mix together add a little shredded cheese.
um, tuna casserole's real easy- so are most casseroles... or pizza, or just eat some ice cream!!!
