please leave out anything that is grilled (ive been eating stupid grilled stuff for at least 2 months...ugh...im so sick of it!) & for complicated meals, please leave details on how to make the meal. THANKS!!!

I got the easiest, healthiest recipe - even young kids love it.

Take 1 can of black beans, 3/4 cup salsa to taste, 1 chopped green pepper, and 1 cup of instant brown or white rice with the water they recommend on the box. Layer the rice and water on the bottom, put the salsa, beans and green pepper on top and put it in a microwave safe casserole dish. Cover and cook it for about 5 minutes and stir. Check to see how tender the rice is and cook for an additional 3-4 minutes if needed. Once the rice is tender, then pull out some whole wheat or regular flour tortillas. Put tortilla or burrito wrap on a plate and warm it for 30 seconds. Place as much of the rice mixture on it as you would like to stuff inside and then put a bit of shredded cheddar right on top. Wrap the burrito and set aside. Put together as many burritos as you have ingredients for and serve!

My kids love it without the flour tortilla. We think they are GREAT! You can even add meat if you like or not.

I have a great recipe for chicken and noodles:

cut up one whole chicken and put parts in pot; cover with water and bring to a gentle boil. Boil for 30-45 minutes, take out of water and when cool enough to handle, pull meat from bones, cut into bite sized pieces

Put 2 cans of chicken broth in large pot. Also add carrots, 3-4 stalks of celery, 1/2 onion, 2 cloves garlic, 2 cubes chicken boullion. Add salt and pepper. Cook until vegetables are tender. Add cooked cut up chicken.
Mix 1 can of cream of chicken soup with 1/2 can water and add to soup mixture - when this is heated through, add 16 oz. frozen egg noodles and heat until noodles are cooked.

SOUTHWEST MEATLOAF

Makes 6-8 servings

2 lbs. ground chuck
1 cup coarsely crushed tortilla chips
1/3 cup taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
½ cup grated cheese, such as a combination of cheddar and Monterey Jack
Combine all ingredients. Press into loaf pan. Bake at 325 degrees for 1 hour, or until top is brown and loaf shrinks from edges.

ITALIAN BEANS PARMESAN

½ cup chopped onion
½ cup chopped green pepper
1 Tbsp. butter or margarine
1 (16 oz.) can whole new potatoes, drained and sliced
1 (14 1/2 oz.) can stewed tomatoes
1 (16 oz.) can cut green Italian beans, drained
¼ cup Parmesan cheese

In skillet, saute onion and pepper in butter until soft. Add potatoes; saute 2 minutes. Add tomatoes, cook over high heat until slightly thickened. Add beans, heat through. Sprinkle with cheese. Makes 6 servings.

I love to make lasagna with the kids. decide as a family what peopel like in their lasagna, change it up a bit. have a white sauce night. We ahve done pizza lasagna, ham and cheese. veggie night. just layer and bake. mine always has lots of cheese the more the better. we have done one with fish and lobster and clams, we are mainahs, added spinach and garlic on one layer, and different seafood on the way up. Kids love to cook and thye tend to eat what they made.

Pizza night
* cooked noodles
*Pizza sauce
*cheese shredded and cottage or ricotta ( family favorite)
*Pizza toppings, meats ,veggies pepporoni, pepeprs, mushrooms
*now layer sauce on panthin noodle toppings cheese and so on, end with cheese sprinkle w red peper flakes oregano abke at 350 till bubbly

Open and heat a can of tamales. Put them on a plate, top with a tossed salad and your favorite dressing. Easy and delicious.
