An arrest warrant is 'served' when the person who is named on the warrant is arrested and booked on the charges that are indicated on the warrant. They do not have to have a copy of the actual warrant in their hands at the time of service (arrest). They only need to confirm with the agency that issued the warrant that it is still on file and valid.

When the person named on the warrant is booked into jail, that original agency who holds the 'hard copy' warrant, takes it out of their file and faxes a copy of it to the jail as proof that they have it and that they confirm it is still valid. Then they take the wanted information 'out' of the national computer so if the arrested person bails out an hour later and gets stopped by the police for a tail light out on the way home, the warrant will not come up again for 'service'.

The warrant itself is a pretty simple looking one-page document that names the wanted person and his date of birth and other important information - home address, the charges, and a bail amount. That's the amount he'll have to post in order to get out of jail.

You actually answered your own question. When the police say an arrest warrant has been served, it means they have the person in custody and the warrant (known as a File 5) can be cancelled.
