I cook all the time, but I have never attempted Chili yet.
I want to make Chili for about 6 or 7 people and need a good recipe. Not to hot, but a little bit of zing to it.
What ingredients ( amounts ) do you suggest?

ooo here's my recipe. It rocks. :)

1.5-2 pounds of ground beef
3 cans (15 oz) of kidney beans
2 cans (15 oz) of pinto beans
1 can (15 oz) of corn (sweet corn, NOT cream)
2 cans (very small 8oz or something) of tomato paste (or sauce... or one of each)
1 onion (chopped) (white or red are my fav.)
1 packet of chili seasonings
I usually also add a bit of garlic to taste

optional:
yes I know it sounds weird but it adds a zing:
1 small cup of coffee
1 teaspoon of chocolate syrup or cocoa
A family friend added those above two and I thought it was really weird, but it adds a really interesting zing to the taste and is really quite good. :)

I don't want to sound like a chili snob but I know I will.

To begin with, real chili is not made with ground meat. There weren't any meat grinders on the chuck wagons where cowboy cooks invented this dish. Real chili is made with beef cut into small dice.

Next, there are NO BEANS in real chili. Beans are cooked separately and served on the side.

There are no green peppers, rutabagas, blueberries, tomatoes or tofu in real chili. If you want to be really authentic there wouldn't even be any onion.

So what is in chili? Diced beef, salt, cumin, chili peppers, masa (corn flour) and water. That's it. Nothing else.

Use a good variety of chilies, anchos, seranos, poblanos etc etc. For the dried varieties soak them in warm water until soft. Puree the chilies.

Brown the beef, add water, cumin and the chili puree, cover and cook on low heat until the beef is tender. Salt to taste and thicken the liquid with a bit of masa mixed with cold water.

This is just nothing like the ground beef in tomato sauce stuff that passes for chili outside of Texas. Try it. Its really good.

Chunky Beef Chili

Ingredients:
2 tablespoons vegetable oil, divided
2 pounds beef chuck, cut into 1/2-inch cubes
2 large onions, chopped
2 celery stalks, chopped
2 garlic cloves, pressed
1 tablespoon ground cumin
1 tablespoon dried oregano leaves
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/4 teaspoon ground black pepper
1 can (28 ounces) whole tomatoes, undrained, cut up
2 cups water

Directions:
1. Heat 1 tablespoon oil in Generation II Dutch (6-qt.) Oven over medium-high heat. Add half of the beef; cook, stirring occasionally with Bamboo Spoon, until meat is browned on all sides, about 8 minutes. Remove beef from Dutch Oven; set aside. Repeat with remaining oil and beef; remove beef after browning.

2. Add onions, celery, and garlic to pan juices in Dutch Oven; cook over low heat 5 minutes, stirring frequently. Return beef to Dutch Oven; add remaining ingredients. Bring to a boil. Reduce heat; simmer uncovered over low heat until meat is tender, 2-3 hours. Add additional water, 1/2 cup at a time, if neccessary to reach desired consistency.

Yield: 8 servings

Nutrients per serving: Calories 313, Total Fat 13 g

Just buy 2 or 3 alarm chili mix at the store and follow the instructions. Do not use beans. That is not real chili.

recipes.com is good but here is my recipe and this will feed up to 7-8 people.

2-3 lbs. ground hamburger- cooked and drained.
1 medium onion chopped- cooked with beef.
2-3 medium bottles of Tomato Juice.
2 packets of chili seasoning (you can get this at the grocery and they do have mild seasonings. the best is french's.)

Get a large pot, add the cooked drained beef and onions to it, then add the tomato juice all of it, then stir in all the chili seasoning until well blended in..
bring to a boil stirring occassionally, low heat and simmer covered for 20-25 minutes stirring often.

MY DAD’S FABULOUS CHILI

3 lb. ground chuck
1 lg. pkg. William’s Chili Mix
3 cans Bush’s Chili Beans
1 lg. onion, diced
2 cans tomatoes, diced
salt & pepper, to taste

Brown meat & onion in skillet, & drain the grease. Add chili mix (your choice of styles—Cajun is especially good if you like spicy), stir well, & let simmer 2 or 3 minutes. In large pot heat chili beans, tomatoes, salt & pepper, & about 2 cans of water. Add meat mixture to pot, stir, cover & cook over medium heat for about 15 to 30 minutes, stirring occasionally.

(My variation: a can of RO*TEL may be added for more spiciness.
