Depends on what you're teaching - many times you can have the students apply what they've learned. For example, I teach medical billing, so in classes I give out scenarios and blank claim forms. I have the students complete the forms and hand in before they leave class. It's not exactly testing, as they are applying the concepts that they've learned in class to the scenarios. Why not try to hold a conversation with the kid and see if he/she can keep up?
