I'm making chicken parmigiana and i baked the chicken but i dont like the pale look that it has, Is it ok if i put it in some olive oil and fry it?

Once you've baked chicken, the chicken is already the consistency it needs to be. If you try to fry it, you're going to cook it further and it might become too dry or too tough. I'd buy some fresh raw chicken breasts and use those to make the chicken parmigiana. You'll have a better result. Happy cooking!

why not try putting it under the broiler for a minute or two until its brown instead of frying it?

baked chicken will not brown as well as raw chicken, and it will be a different flavor

Brown it quickly or it will dry out
