I use a tall stock pot w/ a lid (like a stew pot), I fill the pot with 1/4 of oil and heat it up. Make sure oil is hot enough, (to check, touch an end of the fry in the pot if it bubbles and boils it is hot enough), then put about a cup in at a time, put the lid and let cook for at least 10 minutes, use a metal spoon to place the fries in the oil. (do not drop the fries in there the oil will splash), just after 10 minutes, get your metal spoon and scoop one of and check on it, just continue to cook and check perodically until it is to your crispness, (or at least a golden brown) do not put cut potatoes french fries in the own they will only turn mushy, they will not ever become crispy, Hint about french fries, rinse potatoes, no need to peel at all, just cut in half and cut french fry slices and fry away.
when you get them out have a plate with some paper towels on it put them on there, sprinkle with salt, pepper, or seasoning salt, eat, enjoy, repeat

You could bake them, but then you'll have baked potato sticks and not French fries. You won't get the same taste as would if you made French fries. You don't need a deep fryer to make French fries. Just a deep pot will do. Fill up about a 1/3 of the way with vegetable oil, cut your potatoes into sticks and you're ready to go. Just get a bowl or a cookie sheet lined with some paper towels and some salt to sprinkle the fries with once you've taken them out of the oil and you're ready to go. Happy cooking!

Cut your fries about 1/2" thick, use a skillet that is about 12" in diameter. Use about 1/2" oil, heat until hot on medium heat, put in fries and turn with a spatula (metal cause it's hot) when you see the edges turn brown. They will stick to the pan a little at first, but just like meat will turn loose in a little bit. drain on paper towels and salt to taste. You can also cut potatos into rounds instead of strips, but don't cut any thicker than 1/4" or it will take forever to cook.

I am a Pampered Chef consultant, and what I love to use for french fries is my stoneware. It won't tast the same as if they are deep-fried, but it's really good and so much healthier. Any of our stones will work just fine, but my favorite is the Stoneware Bar Pan, because it's large enough to fit your french fries on one side, and some other kind of food (chicken tenders, etc.) on the other side for a quick, healthier meal. If you are starting with fresh potatoes you will want to rinse the cut potatoes in cold water before frying. This will make the fries crisper when cooked in oil (make sure to remove excess water before cooking otherwise oil will splatter). IMO fries must be cooked in oil to have the correct taste and texture. Baking just seems to dry them out and they may brown but don't quite get the same crispness.

Yes, you can bake them, but they won't taste the same. Part of the taste of french fries is because of the oil. Baking is fine though. We buy the packages of french fries and just bake them and they taste fine.

Actually, they taste much better and a lot less fat.
Just toss them with a few teaspoons +/- of vegetable oil, salt & pepper (or something like a spicy seasoning) and bake them at 350 for about 15 minutes on a cookie sheet. Check on them, stir a bit, and cook for another 5 or 10 minutes.

Fry them in a skillet on the stove, put about a inch of oil in the bottom of the pan, tastes the same as deep fried. I LOVE HOMEMADE FRIES!

Just wanted to add something, because my family loves homemade french fries. Put them in the microwave for about 5 minutes or so to let the insides get done, then fry them or bake them. They are excellent that way!
