I prefer to steam them in a little sea water and beer. They are too delicate a flavor to really use a heavy flavored beer like a stout or ale. The saltiness of the shells and sea water will do nicely.
If they are the big green shelled mussels, use a cucumber sauce (similar to a salad dressing) and serve them chilled.
If they are the smaller variety, serve them in the 'liquor' that they are steamed in, as they will cool rapidly.

I would taste the liquid without salt before putting any salt in. Since the mussels might be salty themselves you won't need much. So taste it, and if it tastes salty enough to you, don't add any more salt. If you think it's not salty enough, then season to taste.

I buy a great little sea salt/garlic grinder @ the grocery - made by McCormicks - I do a few twists over the water just as it is starting to boil.....also goes great in garlic butter.....Love it for a side for dipping..
