Buy the jumbo shrimp and clean and devain them and butterfly them. Use a meat mallet, flat side, to make it thin, about 1/8". Spread some chive & onion cream cheese along with some roasted red peppers and roll it up. Dip it in an egg mixture and dredge it in bread crumbs. You can fry it or bake it. Your choice. It is AWESOME!!!!!!

Fresh shrimp in Mustrd Sauce:
1 16oz pkg or fresh frozen shrimp
1/2 c mayonnaise
2 tlbsp prepared mustard
1/4 chopped onion
1 tlbsp parsley flakes
1/4 tsp thyme
Place shrimp in shallow baking dish, set aside, in bowl mix other ingredients and spread over shrimp bake (Uncovered) at 400 for 20 to 25 minutes(for Microwave assembled as directed but cover on high for 6minutes, turning dish twice, let stand 5 minutes.

Coat the shrimp in Old Bay and then steam them. Shrimp is so good just in the plain, peel and eat style that complicated recipes seem like a waste of time.

Shrimp Scampi
1 lb raw shrimp, peeled and deveined
3/4 cup white wine
1/4 cup light olive oil
1/2 cup unsalted butter
2 tablespoons blue bonnet margarine
3 tablespoons minced garlic
1/4 teaspoon paprika
1/2 tablespoon parsley flakes
grated parmesan cheese, to top
Heat wine, olive oil, butter, margarine, and garlic in a large skillet on medium heat until it just starts to boil.
Then add paprika and parsley flakes, stir in and immediately add shrimp.
Cook for about 4 or 5 minutes or until shrimp turns pink.
Don't overcook. Spoon shrimp onto plate with some of the cooking sauce and top liberally with parmesan cheese.

I think fresh shrimp is served up best in a shrimp boil with old bay seasoning. Throw in some sausage, potatoes, and corn on the cob and you've got yourself a party.
I also like to use fresh shrimp with pasta (shrimp piccata, alfredo, etc.).

Avocado-Shrimp Cocktail:
1 can (11 1/2 oz.) tomato and chili cocktail (bloody Mary) mix
1/3 cup tequila
3 tablespoons lime juice
1/3 cup finely chopped onion, rinsed and drained
1/3 cup chopped fresh cilantro
2 to 3 teaspoons minced fresh jalapeño chili
2 firm-ripe avocados (1 to 1 1/4 lb. total)
3/4 pound shelled cooked shrimp (50 to 70 per lb.), rinsed
Kosher or regular salt
Lime wedges
Tortilla chips or saltine crackers
1. In a bowl, stir together tomato and chili cocktail mix, tequila, lime juice, onion, cilantro, and 2 teaspoons chili.
2. Pit and peel avocados; cut into 1/2-inch cubes. Add avocados and shrimp to cocktail mixture. Mix gently and add salt and more chili to taste.
3. If desired, rub rims of 4 to 6 margarita or martini glasses with a lime wedge. Immediately dip into a dish filled with 1/4 inch kosher salt.
4. Spoon avocado-shrimp cocktail equally into glasses. Garnish with lime wedges and serve with tortilla chips or saltine crackers.
Yield: Makes 4 to 6 servings

boil the shrimp for a short time - as soon as they turn pink they are done
peel them
serve with any sort of pasta and a jar of alfredo sauce, all stirred together
