Portabella CheeseSteaks
Ingredients:
1 6-ounce package sliced Portabella caps
Salt
Vegetable oil
½ large onion, thinly sliced
½ teaspoon dried oregano
4 slices American, Romano or Mozzarella cheese
2 long sandwich buns (usually sold as hoagie buns, typically 6-8 inches long)
1/3 cup sliced cherry peppers or banana peppers
Preparation:
Preheat the oven to 350ºF.
Place the mushrooms in a large saucepan and liberally sprinkle with salt. Add ¼ cup water, turn the heat to medium, and cover. After 6 minutes the mushrooms will have released most of their liquid. Slat again so the mushroom flavor is very strong, and remove and place the mushrooms on a towel-lined plate.
Place about 2 tablespoons oil in an 8-inch sauté pan and add the onion. Fry the onion until very limp and browned, about 10 minutes. Turn down the heat to low, and season with a little salt and the oregano. Form the onion into a rectangular shape to approximate the shape of the buns into which they will go. Cover with the cheese. Cover the sauté pan and keep on the heat until the cheese melts. Remove the cover and cut the onion-cheese mixture down the middle so you have 2 thin, narrow halves. (By doing this, you make it easier to transfer the mixture onto the buns.)
Cut the buns almost in half lengthwise, making sure the "hinge" stays fully intact. Place half the onion-cheese mixture onto each bun with a spatula and add half the mushrooms. Cover with the warm sauce and finally add the hot peppers.
Makes 2 sandwiches.

STUFFED MUSHROOMS
1 pkg. mushrooms
1 pkg. chive & onion cream cheese
1 jar bacon bits/pieces
Pull out stems and clean dirt off mushrooms. Mix cream cheese & bacon pieces in a bowl and fill mushroom caps full with mixture. Bake on 350 for 30 minutes.
You can also buy some puff pastry, thaw it out and cut it into enough squares as your mushrooms. Put the mushroom, stuffed, into the center of the pastry and pull up corners to make a bundle. Brush the crease with egg and bake on 350 for 20-25 minutes or until golden brown and puffed! mmmmmmmm

Sausage Mushrooms
About 15 mushrooms (I buy them in bulk, not in the package, the ones in bulk are bigger)
1 package of ground sausage
1 8oz. cream cheese (softened)
1 bunch of green onions (optional)
Grated mozzarella cheese
Cook sausage and drain off the grease. Put into a med sized mixing bowl. Add cream cheese and onion. Mix well. Wash mushrooms, take out the stems. Add a scoop of sausage mixture into the mushroom. place into a small pan. When done, top with cheese. Bake at 350* until cheese is melted. Enjoy!

I love stuffed portabella mushroom caps
Get 4 huge mushroom caps. Stuff them with the following mixture:
Remove and chop up the stems from the mushrooms.
One cup of unflavored bread crumbs
One egg ( a bit of water to moisten if necessary).
One half pound of crab meat (or use the phony stuff); or chopped scallops; or chopped clams; or cooked shrimp (cut up).
Salt
Pepper
Garlic powder
Four ounces of your favorite cheese (recommend Monterey Jack)
Mix all together and stuff the caps
Bake in a 350 degree oven for 25 minutes or until you can easily stick a fork through the mushrooms.
DELICIOUS!!!!!

Bacon-Wrapped Mushrooms With Honey-Barbecue Sauce:
Prep: 15 min., Cook: 4 min., Grill: 10 min.
24 small fresh mushrooms
12 bacon slices
1 cup Honey-Barbecue Sauce
Wash mushrooms thoroughly. Cut bacon slices in half crosswise, and microwave, in 2 batches, at HIGH 1 1/2 to 2 minutes or until bacon is partially cooked. Pat dry with paper towels. Wrap each mushroom with a bacon slice, and secure with wooden picks. Dip wrapped mushrooms in Honey-Barbecue Sauce.
Grill mushrooms (using a grill basket, if necessary), covered with grill lid, over medium-high heat (350° to 400°) 4 to 5 minutes on each side or until bacon is crisp and thoroughly cooked.
Yield: Makes 8 appetizer servings

My favorite mushroom is the portabello. I buy them already sliced. Melt butter in a non-stick skillet. Put in your 'shrooms, let brown on first side, turn and sprinkle with sea salt, fresh ground black pepper, onion powder and garlic powder. Turn one more time and repeat seasonings. turn one more time to cook the spices a little. The butter and seasonings form a golden brown crust on the portabellos. Delicious!
Also a fave is stuffed mushrooms...pop the stems from "Baby Bellas" or white mushrooms and chop. Combine with flaked crab meet, salad shrimp (the tiny ones in a can), shredded provolone, feta and parmesan cheeses, fresh or dried bread crumbs, one beaten egg, and a little heavy cream to moisten, sea salt, fresh ground pepper, garlic to season. Stuff this into your mushroom caps, and bake for 20 minutes at 350. Sprinkle with more cheese and paprika, put undr broiler for a few minutes until cheese is bubbly.

Chicken Mushroom Fajitas
Instead of sauteing vegetables and chicken on the stove, grill them. Spray or brush vegetables with oil, and cook in a basket on the grill until golden brown and nicely charred around the edges. Grill whole chicken breasts about 2 minutes per side, then slice up and add to vegetables.
INGREDIENTS
8 ounces cream cheese, softened
1 teaspoon fajita seasoning
1 tablespoon chopped fresh cilantro
1/2 teaspoon garlic powder
4 tablespoons oil divided
4 ounces exotic or wild mushrooms, such as elf abalone, crimini, blue foot, lobster, shiitake, oyster, or portabella, sliced.
1 small red onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1/2 teaspoon salt
2 boneless, skinless chicken breasts, thinly sliced crosswise into strips
4 8-inch flour tortillas
DIRECTIONS
In small bowl, stir together cream cheese, fajita seasoning, cilantro, and garlic powder. Set aside
In large heavy skillet over moderately high heat, heat 1 tablespoon of the oil. sauté mushrooms until softened and liquid has evaporated, 3 to 4 minutes. Scrape into bowl and set aside.
In same skillet over moderately high heat, heat 2 tablespoons of the oil. Add onion, peppers, and salt and sauté until crisp-tender, about 4 minutes. Scrape into bowl with mushrooms.
Heat remaining 1 tablespoon of oil in skillet and add chicken. Cook over moderately high heat until just opaque throughout, about 2 minutes. Toss with vegetables and heat through.
Place tortillas on a microwavable plate and microwave about 15 seconds on high, until warmed through. Divide cream cheese mixture into four portions and spread over each tortilla. Spoon chicken and vegetables over cream cheese, roll up, and serve.
Makes: 4 fajitas

It's not really a recipe, but I love to saute them in garlic and olive oil and toss them on top of a really good steak. Yum!
