Take a package of baby spring mix salad, packaged almonds, raisins, strawberries and mandarin orange slices in a can. Drain fruit. Mix all items together and toss with some Kraft Lite Done Right Raspberry Vinigarette salad dressing! yum-o!

This is a staple in our house! We don't usually have the cucumbers in it, though.
Panzanella (Sicilian Bread Salad)
Loaf of day old crusty Italian bread
1 cucumber
2 beefsteak tomatoes (best in the Summer months)
1/4 sweet onion
2 cloves garlic
1/2 c. olive oil
1/4 c. balsamic vinegar
salt, pepper, pinch of sugar, few leaves of fresh basil
1/2 c. cubes of fresh mozzarella cheese
Optional things are pepperoni, capers, olives, green or red peppers, etc.
Get a loaf of day old crusty Italian bread and cut it into little cubes, add a chopped cucumber, 2 beefsteak tomatoes (these are usually only good in the summer when they are fresh). Chop the tomatoes and 1/4 sweet onion sliced thin. Add 2 cloves of minced garlic, 1/2 ounce of olive oil, 1/4 ounce of balsamic vinegar, salt, pepper, pinch of sugar, few leaves of fresh basil and some cubes of fresh mozzarella cheese. Optional things are pepperoni, capers, olives, green or red peppers. Just toss everything together.... it’s a really good summertime dish when the tomatoes are ripe!

VEG-ALL MACARONI SALAD
1 box ring macaroni or 1/2 package small ditali pasta (cooked and drained)
1 large red onion, diced
1 cucumber, diced
1 cup celery, diced
2 (16 oz.) cans Veg-all vegetables, drained
1 (16 oz.) package frozen vegetable of your choice, cooked as directed on package (I usually use corn)
1-2 tomatoes or red pepper
Mix ingredients together, adding pasta last - add pasta a little at a time, it's easy to add too much, just put in as much as it takes to still look colorful from the other ingredients
DRESSING
Combine together:
1 1/4 cup sugar
1 tsp. salt
2 tsp. parsley flakes
1 Tbsp. dill weed
3/4 cup white vinegar
1 tsp. garlic powder
1 Tbsp. prepared mustard
1 1/2 tsp. pepper
Heat in pan until sugar is melted - don't have to boil it, just until sugar is melted. Cool and pour over salad.
Refrigerate overnight before serving. Stir before serving.

Simple Pasta Salad
Add to cooked Rigatoni pasta:
Grape tomatoes
Chopped cucumber
Red onion, chopped
Yellow bell peppers, chopped
Toss vegetables with pasta. Pour zesty Italian dressing over salad ingredients. Add cracked black pepper and parmesan cheese to taste.

This is my favorite. It's simple to make yet it looks elegant and taste delicious.
- A bag of spring mix salad
- dried cranberries
- Freshly sliced pears
- glazed pecans (pecan pie glaze is my favorite but there are other flavors too)
- Top with crumbled feta cheese
- Raspberry pecan dressing
I promise it is delicious!

I've tried a few of her recipies..EXCELLENT!.. dunno who puts up with her quirks (if she has any) but with this kind of cooking.. I'm sure it very worth it..lol
