Today while running around everyone kept telling me to "Have a good one". What does that really mean. A good one what?

Depends on what journey you're about to partake. If you are about to for for a walk...then it means, have a good walk. If your about to ride a bike then that's what it means, etc. The beauty of the phrase is that its so adaptable; One really does not even need to know what exactly you are about to do... The phrase still applies, very nicely.

It's just another way of saying, "Have A Good Day!"
