Take a cheesecake, cut it into slices, stick a popsicle stick in each slice, wrap each piece in plastic wrap and place in your freezer until hardened. Get the best chocolate you can find, melt it by placing it in the microwave or make your own double boiler by placing the chocolate in a metal bowl and place that over a pot that has simmering water in it. Stir until almost completely melted, take off heat, and stir until it is completely melted. Let cool. Take out cheesecake slices and holding each one by the popsicle stick, dip each one in the chocolate until they're completely covered. Place on a cookie sheet and place in fridge until chocolate hardens a little. Then place in freezer to freeze. Rewrap in plastic wrap and keep in freezer until ready to eat! Yummy! Happy cooking!

Because confectionery can be very, very touchy - You're probably better off to find a source for chocolate molds & prepared chocolate. It would probably frighten most people to know how much wax goes into making chocolate coatings such as you've described.
The dipping process will be simpler if you make small bite-sized pieces. You must skewer the item to be dipped, and a whole slice of cheesecake can be quite heavy!

I make something similar to this but I don't dip slices. I cut them up into squares or use cookie cutters to make them different shapes. I then use toothpicks to dip them completely in chocolate and set them on wax paper. You can make the cheesecake in any flavor and the chocolate coating really enhances that!

the recipe for the chocolate would be just a bag of chocolate chips melted over a double boiler and probably 1 tsp vegetable oil. (helps keep it nice and shiny ) and i would freeze the cheesecake before i try to dip it but like the other girl said maybe smaller chunks would be easier to deal with. but would freeze them first
