I need to know a good recipe, that contains evaporated milk. I have 4 cans & don't know what to make with them. Personally tried recipes that are good, I would like to try them.

I have tried a few of these, the pumpkin pie is good, fudge is good, chocolate satin pie is good...

page 21 has got some nice drinks too

All that evaporated milk is, is milk that has had the water evaporated out of it. It has a very creamy and silky feel to it. If you want to reconstitute it back to regular whole milk I believe you just add an identical quantity of water and then you have regular whole milk although I don't think it tastes the same but you can use it as such.The instructions to do that should be on the can plus they usually put a recipe or two on there as well.

When I was growing up we used evaporated milk for a lot of things. It is great in coffee and has sort of a different creamy like taste better than regular milk that is, if you like milk in your coffee at all. It is terrible in tea though. We also used in when making meatloaf as a moistening agent. If we didn't use the evaporated in the meat loaf we used regular. Used it for pumpkin pies too. Great!

Pineapple Fluff
1 cup
1/4 cup
1 – 20 ounce can
1/2 cup
2 envelopes
1/4 cup
1/4 teaspoon
1 cup
2/3 cups
2 tablespoons

graham cracker crumbs, crushed fine
butter, melted
pineapple crushed
pineapple juice
unflavored gelatin
sugar
salt
evaporated milk
evaporated milk
lemon juice
Maraschino cherries (optional)


Melt butter in microwave safe bowl. Add graham cracker crumbs and mix well. Press crumbs into bottom of 8 x 8” pan. Chill. Drain pineapple, reserving 1/2 cup of the juice. Put the juice in small saucepan. Sprinkle unflavored gelatin over top. Let stand 6 minutes. Add sugar and salt. Stir over medium heat until sugar and gelatin is dissolved. Remove from heat. Add 1 cup of evaporated milk. Refrigerate until congealed slightly. Beat on medium high speed with electric mixer until mix has doubled in size. While beating slowly add the 2/3 cups of evaporated milk and the lemon juice. Fold in pineapple. Pour over crumbs. Refrigerate several hours or overnight. Decorate top with cherry halves just before serving if desired.

Barry's Chocolate Filling

3 cups Sugar
2/3 cup Cocoa
2/3 cup Canned Milk
1 stick Butter
1 tbs. Vanilla

Mix sugar, cocoa and canned milk together. Cook until it forms a soft ball in cold water. Add 1 stick Butter or Margarine and 1 tbs Vanilla. When slightly cooled, spread on cake.


No Bake Cookies
Chocolate Oatmeal Cookies (That is what we called them!)

1/4 cup Cocoa
1 stick Butter
1/2 cup Canned Milk
1/4 cup Peanut Butter
2 cups Sugar
2 cups Quick Oatmeal

Mix cocoa, butter, sugar and milk, boil 3 minutes; stirring constantly. Take off stove and add peanut butter and oatmeal. Stir well and spoon onto wax paper and let cool.


You can also use it as you would regular milk. I have no problems using it in substituting.

Check the can for instructions on diluting it.

Use as a substitute for milk or cream in any recipe--I've made excellent quiches using evaporated milk.

PS, lots of people confuse evaporated milk with sweetened condensed milk, which is entirely different!

Boston Fudge Cake with Fudge Sauce
Yield: 9 servings

Cake:
2 cups brown sugar
1/2 cup shortening
1 cup buttermilk
1 teaspoon vanilla
2 squares unsweetened chocolate, melted
3 eggs
2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Fudge Sauce:
1 bar German chocolate
1/2 square unsweetened chocolate
1 stick butter
3 cups unsifted powdered sugar
1 2/3 cups evaporated milk
1 1/4 teaspoons vanilla extract

Preheat oven to 350ºF.
Grease and flour a sheet pan.

To make the cake, cream together sugar, shortening; add buttermilk and vanilla. Add melted chocolate, and eggs, 1 at a time; beat for 2 minutes. Sift together dry ingredients, add to creamed mixture. Beat an additional 2 minutes. Pour into prepared sheet pan. Bake for 35 minutes.

To make the sauce, melt chocolate and butter in saucepan over very low heat. Stir in powdered sugar, alternately with evaporated milk, blending well. Bring to a boil over medium heat, stirring constantly. Cook and stir until mixture becomes thick and creamy, about 8 minutes. Stir in vanilla; serve warm over cake.

MOM’S PIE FROM LEFTOVER PIECRUST

When Mom baked pies, & she had leftover pie dough, she used to make a special pie for my younger brother & I that was so very tasty. Actually, I always suspected that Mom made sure there would be “leftover” piecrust. The finished pie is almost like creamy candy with a piecrust base. I made it for my kids, I believe to their delight, & now I sometimes make it just for myself. It sure brings back great memories! I would love to see the look of pleasure that will come upon your face when you first bite into it!

piecrust (homemade or store bought)
8 to 10 pats of butter
white sugar
cinnamon, to taste
evaporated milk

Place piecrust in pie plate or tin, lay pats of butter on bottom , & sprinkle somewhat lightly with cinnamon (to your taste) & liberally with sugar (maybe 1/4" deep in pan). Then pour in just enough evaporated milk to cover all ingredients (about 1/4” deep). Bake at 350 degrees F. until crust is brown & filling is somewhat firm, yet gooey, but not runny.

Wow! Now my stomach is growling for a "memory fix"!

my favorite is Honey Mustard Mozzarella Chicken INGREDIENTS 4 skinless, boneless chicken breast halves 3/4 cup honey 1/2 cup prepared mustard lemon pepper to taste 4 slices bacon, cut in half 1 cup shredded mozzarella cheese DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Place the chicken breast halves in a baking dish, and drizzle evenly with honey and mustard. Sprinkle with lemon pepper. Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 minutes, or until chicken juices run clear, bacon is crisp, and cheese is bubbly.

how about making some fried chicken tonight and using a can of milk to make your gravy with? Or you could use it in the biscuits that you will make to go with the gravy. Or if worse comes to worse, just dilute it with a can of water and eat cereal with it.
