My family loves spinach, I have five recipes that we use continuasly I won't list them all here but if you want contact me
1)Chicken Breast wellington (serves 6)
Ingredients
2 tbls butter
3 cloves garlic, minced and divided
1 pkg (10 ozs) fresh spinach, rinsed
1/2 tsp. salt
6 boneless, skinless chicken breast halve
3/4 c. shredded Parmesan cheese
4 tsp. dried basil
1&1/2 pkg (17.3 onces each) frozen puff pastry sheets (3 sheets) thawed
*I have found that if you put the puff pastry in the fridge to thaw several hours before you need it, it will thaw evenly without becoming too warm.
1 egg white, beaten
3 tbls sesame seeds
1 jar (7 ounces) roasted red peppers, drained
1/4 c olive oil
1 tbls white balsamic vinegar
Directions
1) Preheat oven to 400 degrees F. Melt butter in large skillet; add 2 cloves garlic and cook 30 seconds, add spinach and salt; cook, covered, 2-3 minutes, drain well
2) Place chicken breasts between sheet of plastic wrap; pound with meat mallet to about 8 in. diameter. Combine Parmesan and basil; sprinke 1 tbls. of mix over chicken breasts. Divide spinach among breasts. Fold 2 sides of each breast over filling and roll up tightly. Coat rolls with remaining Parmesan mix.
3) Spread pastry sheets on lightly floured board. Cut each sheet in half, to create six 10x5 in. sheets. Place 1 chicken roll near end of each sheet; fold pastry over ends and roll to enclose. Trim off any excess pastry; press edges to seal. Place seam sides down on ungreased jelly-roll pan.
4) Brush rolls with egg white and sprinkle with sesame seeds. Make cuts on top of each roll to vent. Bake until golden brown, about 35 min.
5) While baking, puree peppers, oil, vinegar and remaing clove garlic in blender; serve as sauce with chicken.

SPINACH FRITTATA
Buy a box of frozen spinach, thaw and squeeze all the water out, this is important, spinach should be dewatered as much as possible. Beat 6 eggs, add salt and black pepper to taste and a little oregano. Mix spinach into eggs and mix in little pieses of cream cheese or if you like Feta (if you use Feta leave out the salt). Lightly oil a skillet which can go in the oven or a glass baking dish, pour in your mixture and bake uncovered in preheated oven at 350 degrees for about 15 minutes. Top should look firm and a knife inserted should come out clean. This dish is great with a little garlic bread on the side.

A wonderful and easy spinach soup recipe is:
a bit of olive oil in the pan, add chopped shallot or spring onion, a bit of garlic, sautee 30 sec or so, add 2 cans of chicken, beef or veg broth and stir in a 5 oz bag of spinach. top with 4 egg omlet that has been cut into strips. Filling, fast, and good for you too!

Good news, spinach contains no more iron than any other leafy green veg so you don't have to eat masses of it; that will just give you an upset stomach.
Bed news. Lambs liver is probably the best thing to eat. That and prunes.
The trick is to very gently cook a small amount of liver (1/4lb) and mash it up in some gravy if you don't like to eat it. I like it with smoked bacon and red onion in gravy, and I usually put some spinach in there as well.
You can get frozen spinach nuggets at a lot of supermarkets, if you defrost one of those and mix it with some parsley all you can taste is the parsley.
You can add a nugget to omelet and kid yourself its herb omelet, you can add it to soup.
Pork is not that rich in iron compared to dried fruit like apricots and prunes, you're probably better off eating those.

Try the spinach raw in your salad - that's really the best. If making cooked spinach, try adding butter & a small bit of lemon juice. The lemon juice really makes it edible. Also, bacon helps cooked spinach taste better.
Bacon/spinach quiche is real good.

I think it's silly to force yourself to eat spinach if you don't like it, especially when there are better sources of iron out there! Have a steak. Eat some raisins. Take a supplement! Leave the spinach for those who love it. Good luck!

Creamed Spinach
INGREDIENTS:
2 cups chopped, cooked spinach
2 teaspoons finely minced onion
1 teaspoon salt
dash nutmeg
1 cup heavy cream
1 tablespoon butter
1 hard-cooked egg, sliced, optional
PREPARATION:
Heat spinach in saucepan; add onion, salt, nutmeg, cream, and butter. Mix well and heat through. Spoon onto serving dish and top with hard-cooked egg slices, if using.
Creamed spinach recipe serves 4.

Spinach and red pepper saute.
INGREDIENTS:
* 1 tablespoon olive oil
* 2 teaspoons butter
* 2 medium red bell peppers, seeded and cut into strips
* 2 garlic cloves, very thinly sliced
* 1 pinch crushed red pepper flakes
* 8 cups fresh rinsed spinach
* 1/4 teaspoon salt, or to taste
PREPARATION:
In large skillet, heat olive oil and butter over medium heat. Add bell peppers, garlic, and pepper flakes. Cook, stirring frequently, for about 4 minutes. Add rinsed (undried) spinach to the skillet. Sprinkle with salt. Increase heat to medium-high and cook, stirring occasionally, for 3 minutes or until vegetables are tender.
Pork loin stuffed with spinach.
INGREDIENTS:
* 1/2 (10 ounce) package frozen chopped spinach, thawed and drained
* 3 tablespoons margarine
* 1/2 cup diced onion
* 1 clove garlic
* 1/3 cup dry bread crumbs
* 3 pounds pork tenderloin
* 2 tablespoons ketchup
* 1/4 cup orange juice
* 2 tablespoons teriyaki sauce
* 1/2 teaspoon ground cumin
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Saute spinach, butter, onions and garlic over medium heat until soft. Add bread crumbs. Cut tenderloin in half lengthwise. Stuff with spinach mixture and secure with kitchen twine.
3. In a bowl, mix ketchup, orange juice and teriyaki sauce. Baste tenderloin with 1/2 of the mixture. Sprinkle pork with cumin. Place in shallow roaster and bake at 350 degrees uncovered for one hour. Baste with reserved marinade and cook one more hour covered. Use meat thermometer to check for doneness. Thermometer should read 160 to 170 degrees F (71 to 77 degrees C).

Angel Hair Pasta with Shrimp and Spinach:
Serve with ripe tomatoes dressed with oil and vinegar. Substitute finely chopped red onion if you don't have shallots on hand.
8 ounces uncooked angel hair pasta
1 1/2 pounds peeled and deveined large shrimp
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/4 cup finely chopped shallots
1/2 cup fat-free, less-sodium chicken broth
2 tablespoons lemon juice
6 cups coarsely chopped spinach
2 tablespoons capers
Cook pasta according to package directions, omitting salt and fat. Drain.
While pasta cooks, sprinkle shrimp with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add shallots; sauté 30 seconds. Add shrimp; sauté 3 minutes. Remove shrimp mixture from pan. Add chicken broth and lemon juice to pan, scraping pan to loosen browned bits. Add cooked pasta, shrimp, spinach, and capers, and heat 1 minute or until spinach wilts, stirring frequently.
Yield: 4 servings (serving size: 1 1/2 cups)

I make a pasta dish with a garlic butter sauce. I take the pasta, toss it with olive oil that has been flavored with the garlic (heated up in a pan on a low temp with crushed cloves of garlic in it) and I add butter. I toss it in the garlic olive oil butter mixture and top it with some frsh diced tomatoes. While still hot, I mix in baby spinach. Add as much as you desire. My hubby who hates spinach even eats it! For a healthier spin on it, use whole wheat pasta!
