If it is a full blown tagine with different types of meat in it, go for a not too heavy young red wine, like a Beaujolais.

a fruity red like a Bordeaux or maybe a Shiraz if it is a spicy Tajine.
A Chardonnay also would go well in some cases but i'd go with one of the reds.
