No, because an island is not the deep see, it's an island. You might be able to go deep sea fishing near Santorini, but not on the island.

Yes but if you want to catch fish too, you have to find someone who knows where to fish.That would be a proffessional fisherman that you'll propably have to hire and have your own equipment or a recreational fisherman that you'll meet there and will invite you for fishing on his boat and provide you with proper fishing gear.
I don't think that there are fishing guides but i'm not sure.There propably boats to rent, don't know about renting fishing gear but buying almost sure.
Try slow trolling(>1mph) even in deep water with live bait prefferably squid("kalamari" in greek),cuttlefish("soupia" in greek),garfish or needlfish( "zargana" in greek) over a deep reef in the midddle of the open sea and you might catch snappers, amberjacks, tunas and grouppers the last two with some luck.
The bottomline is that yes you can do deep sea fishing but with a little bit more effort in setting it up compared to the US or Australia or even the UK.

hire a speedboat and go out into the ocean... you will find the fish in the resturants will be just as fresh... the greek islands are gorgeous... you might have to hire a rod etc out there..., as they wont let you on the plane with one.......

Yes.. take a pole and a rental boat is helpful... also, try liver bait (wrapped in panty hose - to hold together- about the size of a pop bottle cap).
