I prefer mayo. I also feel that the more ingredients that you put in your potato salad, and you are going to a function, the less people will eat.

People love potatoes, but for whatever reason, people are funny about the salad. I hate crunchiness going on in mine so that takes out bell peppers and onion. Maybe use onion powder or grate your onions so you have that flavor.

I myself am very basic about mine. Mayo, mustard, eggs, a little sugar, salt and pepper. Mix this together and pour it over your cooked potatoes then mix. Lots of mayo too because those potatoes absorb the mayo and you want it kind of creamy. People can add more salt if they want to so I kind of skimp on that.

You know Oil and vinegar actually sounds really good in potato salad. My family has been making special potato salad for years. Every guest who has ever tried our potato salad has liked it. Even people who hate it and refuse to eat most other peoples potato salad. I'll admit I hated potato salad growing up, but love it now. My mom and sister know how to make it perfectly to my liking. It probably is the simplest recipe without all of that extra stuff people put in it like mustard and relish. We only use Mayonnaise. I think I might actually try making some potato salad myself and using oil and vinegar in it instead of Mayo. It actually seems healthier. Thanks for the tip.

I like it better with mayo, but if ypu serve it with french, italian, or greek food, I would use either a vinegar-oil dressing (which is called "vinaigrette" btw) or an herbed yogourt dressing (mix plain yogourt with culinary herbs, sal, and pepper, and let sit for a minimum of 2 hours in the fridge)
Sour cream also works very nicely

I have never had oil and vinegar dressing mix for my potato salad, but to be honest it sounds like it would probably taste better!

Potatoes, hard-boiled eggs, mayo, mustard, onion, spoonful of pickle juice, salt and pepper. Leave it in the fridge overnight and eat it with Nacho Cheese Doritos instead of a fork or spoon the next day.

definitely mayo. My secret to a great p/s is to put a little liquid chicken boulion into the mayo. It gives it an awesome taste that no one can pin point.

A little bit of light mayo and mustard, sweet pickle relish and dill pickle relish, boiled eggs chopped celery and a little minced onions stirred together with warm potatoes
