More specifically, they come from the cones of pine trees, they are the seeds; only certain varieties of pine have seeds large enough to call "pine nuts" as you see them in the shops.

they can be from any country that produces them. generally they are from europe (from stone pines) or asia (from Korean pine and Chilgoza pine). They are usually produced in areas where they are used the most like Italy, Spain, and parts of France, as well as China, Mongolia, Korea and some parts of Siberia. They are also produces in smaller quantity in U.S. and Mexico. Most of the supply in the market comes from northeast China. They are sometimes hard to find because they have a tendency to go rancid in short pariods of time.
