One would think that he hates Jews - but even though he picks on Kyle for being a Jew, Kyle is still his friend. Therefore he does like a Jewish person - he just enjoys picking on them and stereotyping them. Personally, Kyle is my favorite SouthPark character!
I think that Cartman just picks on Kyle for being Jewish because he loves to make fun of people. People make fun of him for being fat - so he makes fun of Kyle for being a Jew.

I wouldn't take it personally, the writers of SouthPark have "issues" with ALL religions. Religion is one of their main targets to ridicule and degrade for "laughs".
It's " funny" when someone else's religion is the target.
But their intention towards religions is pretty obvious.
That's really why "Chef" left the show.

Because that's the way the cartoon was written. Look around, in the real world there is always one insufferable Jerk. In South Park it just happens to be Eric.
