Black Bean And Corn Salsa Recipe
3 ears fresh white corn
3/4 c. water
3 med. tomatoes, peeled, seeded and finely chopped
3 jalapeno peppers, seeded and minced
2 cans black beans, drained and rinsed
1/2 c. chopped fresh cilantro
1/3 c. fresh lime juice
1/4 t. salt
1/4 t. freshly ground pepper
2 avocados, chopped
1 med onion, chopped
3 cloves garlic, diced
Cut corn from cob, place in saucepan, add water and bring to a boil. Cover, reduce heat, and simmer 6 to 7 minutes or until tender. Drain corn and transfer to a large bowl. Add all other ingredients except avocado and stir gently. Cover and chill. Just before serving, stir in avocado. Serve with tortilla chips.

Ingredients:
1 (15 oz.) can black beans ( rinsed and drained)
1 cup frozen corn kernels (thawed)
1/2 cup chopped red bell pepper
1/2 cup chopped fresh cilantro
3 tablespoons lime juice
8 small green onions - chopped ( use some of the stem also)
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon ground cumin
** Optional **
1 small green chili chopped or have used crushed red pepper - go lightly
Directions:
Mix all the above well. Refrigerate over night to let flavors blend.

This is a very pretty and tasty salsa - rinse and drain the black beans, add canned or cooked frozen corn in a two to one measure...........2 cups of beans, 1 cup of corn. Mince some fresh scallions ( green onions) and add along with about 3 TB of minced Cilantro, salt & pepper to taste, add a dash of Cayenne for a little kick. Drizzle with unflavored salad oil and serve.

Corn & Black Bean Dip
2 cans black beans, drained and rinsed
1 can white corn, drained
Half cucumber, in tiny pieces
2 tomatoes, cubed small
1 small purple onion, small diced
1/3 cup fresh chopped cilantro
Mix ingredients in large bowl. Pour in 1 and 3/4 cups italian dressing (Ken's Steakhouse is great!) and mix well. Marinate in refrigerator overnight or at least for a few hours. Drain most of dressing off and serve dip with Tostitos scoops.
