Fish Pie


1 1/2 lbs white fish fillets (or half white and half salmon)
2 cups milk, maybe ½ cup more,depending how thick you want the sauce
4 ounces margarine or butter
1/2 cup all-purpose flour
4 ounces peeled prawns
2 chopped hardboiled egg
1 tablespoon small capers
3 tablespoons chopped fresh parsley
1/2 cup peas
1 finely chopped celery rib
1 tablespoon lemon juice

FOR THE POTATO TOPPING
2 lbs freshly cooked potatoes
1 ounce margarine or butter
2-3 tablespoons sour cream
a good grating nutmeg


Preheat oven to 400 degrees F.
Put the fish in a baking dish and season with salt and pepper.
Pour over 1 cup of the milk and dot with a few flecks of butter, bake in the oven for 15 minutes.
Strain but reserve the cooking juices, remove any skin from the fish and flake the flesh in large pieces.
Make the sauce, melt the rest of the butter in a saucepan, stir in the flour and cook it for 1 minute, start adding the cooking juices bit by bit, stirring all the time, after that add the rest of the milk, if still too thick just add a little more milk.
Season the sauce with salt and pepper.
Mix in to the sauce: fish, prawns, eggs, capers, parsley, peas and celery, add the lemon juice and check the seasoning.
Pour the fish mixture in a 1½ liter greased ovenproof dish.
Mash the potatoes with the butter, sour cream and nutmeg, check the seasoning, and then spread this on top of the fish.
Bake in the oven at 400F for 30 –40 minutes.

No!No!No! First, go to the fishmonger (or fish counter in your local supermarket) and ask for any offcuts for a pie - any white fish, some smoked haddock & a few prawns are a good bet. You'll also need fish stock: Either buy it fresh, use a stock cube, or make it yourself from scratch - plenty of recipes about. Cook the fish in milk or single cream until just done - just five or six minutes should do. Set aside the fish in an oven proof dish, then add the stock & some white wine to the pan you cooked the fish in & reduce the sauce until thick. Add some parsley at the last minute, pour over the fish & pipe mashed potato onto the top. Put in an oven at 200 degrees for about 20 minutes to heat through & brown.

Salmon Pie

Pastry for two crust pie.

16 oz. can of salmon, skin removed
1 pound (about 3-4 medium) potatoes, cooked and mashed
1 medium onion, minced
Salt and Pepper

Saute onion in a small amount of oil. Then, combine salmon, potatoes, and onion. Salt and pepper to taste. Place mixture into pie crust and seal the top crust. Brush top crust with egg yolk.

Bake pie at 350 degrees for 30-40 minutes or until crust is golden brown.

(Suggestion: My husband loves this pie served with softened butter that can be spread on top.)

2 tablespoons butter or margarine
2 tablespoons flour
1 cup milk, or milk and fish water
1 teaspoon salt
1 cup cooked peas
1 tablespoon onion -- grated
1 tablespoon green pepper -- chopped
2 cups mashed potatoes -- seasoned

Steam or cook the fish in water until it flakes. Prepare a white sauce with butter, flour, milk and 1/2 teaspoon salt. (Part of the white sauce liquid may be water from the cooked fish) To the white sauce add peas, grated onion, green pepper, and 1/2 teaspoon salt. Place the cooked fish in a buttered casserole; pour the sauce over it. Top with well-seasoned mashed potato. (To freshly cooked and mashed potato, add 1 tablespoon butter, 1/2 cup milk, and salt and pepper to taste.)
Bake in a hot oven 400^ for 12 minutes or until hot and bubbly.

Fish pie de luxe
1 x 4 oz fillet undyed smoked haddock - poached in milk for 8 minutes
1 x 8 oz fillet haddock poached or steamed for 8 minutes
2 oz cooked & shelled prawns
half pint cheese sauce made with milk smoked haddock was poached in (if you don't like cheese substitute parsley sauce)
2 lb potatoes boiled & mashed
grated cheese for topping

Grease ovenproof dish. If deep dish, line sides with thin layer of mashed potato. If shallow dish, leave this step out. Flake fish coarsely and mix with prawns. Put into ovenproof dish. Cover with cheese (or parsley) sauce. Top with mashed potato, fork lattice pattern on top, sprinkle grated cheese on top. Put into hot oven (200 degrees) for 20 minutes. Enjoy!

Buy some frozen white fish.
Boil it until cooked.
At the same time boil potatoes until cooked.
Mash potatoes with some butter and milk.
Mash fish, and put in pie dish.
Put mashed potato on top.
Grill until potato is browning.
Voila, one fisherman's pie.

I have never heard of a fish pie. I am good with apples and mixed berries but fish is out of my league.

two fillets of white fish and one of smoked fish.
poach in milk for ten minutes.
flake fish and put into a buttered dish.
top with mashed potato (add a little grated cheese if liked).
top with crushed plain crisps.
Bake in the over for 20 minutes at 190/Gas mark 5

use fresh cod/haddock
make sure it's filetted
place it in a glass dish, and use plenty of herbs/spices (salt, pepper, bay leaf, parsley etc) then pour in a cup or two of single cream
cover with freshly mashed potatoes and bake it for about 30 mins (180°c) or until the potatoe starts to turn brown

best eaten with spinnach, and a glass of dry white wine
