Buy the graham cracker cups in the baking aisle of your grocery store. Buy condensed milk, marshmellows (small ones) and raspberry chocolate chips. Place a dollop of condensed milk in the cups, fill with alternating rows of chippies, mellows, and more milk. Then into the oven on 375 for about 20 minutes, or until the marshmellows get brown. Pull out, wait a few minutes and enjoy. A great summertime treat, or a treat anytime!! Mmmmmm yum :)

A Chocolate Pear Bake is a dessert that resembles a brownie in appearance, yet contains no flour, instead using whipped egg whites to provide structure. The pear adds a nice mild fruit tone to the chocolate.

Ingredients
7 oz Semisweet chocolate, chopped or chips
1/2 cup Butter or Margarine
4 Eggs, separated
1/2 cup Sugar
2 Pears, sliced
Lightly whipped cream, to serve

Procedure
Grease a 9x9 inch baking dish, and pre-heat the oven to 325°F.
In a double boiler, melt the chocolate and butter or margarine. When melted, remove from the heat.
Whisk the egg yolks and sugar together until they become thick and a pale yellow color.
In a separate bowl, whisk the egg whites until firm.
Combine the chocolate and egg yolk mixture, and mix well.
Beginning with about 1/3 the egg whites, gently fold them into the chocolate/egg yolk mixture.
Add the slices of pear, and stir once or twice. Add the entire mixture to the baking dish.
Bake for 35-40 minutes, until the bake is springy yet firm to the touch.
Serve hot with whipped cream.

Substitute sliced peaches, apples, or orange segments for the pears.

Warnings
Over mixing after the egg whites have been added to the batter can result in the bake being too dense.

1 1lb. loaf french or italian bread torn into sm. cubes,3 c. milk, 1/4 c. heavy creaam, 1/2 c. coffee liqueur(Kahl`ua), 1 c. graanulated sugar, 1 c. packed light brown sugar, 1/4 c, hershey cocoa powder, 1 Tbl. vanilla extract, 2 tsp.pure almond extract, 1 1/2 tsp cinnamon, 6 lg. eggs,lightly beaten, 8 oz, semisweet chocolate, grated
Preheat oven 325*. Lightly grease a 13x9 baking dish.Place the breadd in dish.
In a lg. bowl, whisk together the milk, cream,and liqueur. In another bowl, combine the granulated and brown sugars with the cocoa powder and mix well.Add this to the milk mixture and whisk to combine. Add the vanilla and almond extracts and the cinnamon to the beaten eggs. Combine the egg mixture w/ the milk mixture and mix well.
Stir in grated chocolate.Pour the mixture evenly over the bread cubes,let stand stirring occasionally for at least 20 mins, or until the bread has absorbed most of the milk mixture.
Bake the pudding for 1 hr,or until set: a knife inserted into center of the pudding should come out clean.
Serve the pudding warm,or refrigerate it and serve chilled.
Most of us in New Orleans have it warm.Store leftovers(if you have any)in refrigerator.

Banana chocolate chip muffins
1 c Extra ripe medium bananas
(approximately two med)
2 Eggs
1 c Packed brown sugar
½ c Butter, melted
1 ts Vanilla
2 ¼ c All purpose flour
2 ts Baking powder
½ ts Ground cinnamon
½ ts Salt
1 c Chocolate chips
½ c Chopped walnuts
Puree bananas in blender. In medium bowl, beat pureed bananas, eggs, sugar, butter and vanilla until well blended. In large bowl, combine flour, baking powder, cinnamon and salt. Stir in chocolate chips and nuts. Make well in center of dry ingredients, pour in banana mixture. Mix until just blended. Spoon into WELL greased 2 1/2 inch muffin cups. Bake in 350 oven for 25 to 30 minutes or until done. Remove from pans and cool.

Layered Ice Cream Dessert
1st layer - ice cream sandwiches
2nd layer - pour caramel ice cream syrup
3rd layer - ice cream sandwiches
4th layer - more ice cream syrup
5th layer - whipped topping
6th layer - crushed Skor or Heath candy bars
In a 9x13x2-inch pan, layer all ingredients in the order given. Freeze till ready to serve.

Get some ice cream sandwhiches and just rip off one side's chocolate part and place it under the other side and put them in bowls with the ice cream parts on top and call it your own. Nobody'll ever know the difference... >_>

These are delicious and you can always put choc on top as well.
INGREDIENTS:
3/4 cup butter
2/3 cup white sugar
2/3 cup brown sugar
1 egg, beaten
1 teaspoon vanilla extract
1 cup mashed bananas
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan.
In a large bowl, cream butter, white sugar and brown sugar until fluffy. Beat in egg and vanilla. Fold in mashed banana. In a separate bowl, mix flour, baking powder and salt. Fold flour mixture into butter mixture. Stir in chocolate chips. Spread in prepared pan.
Bake in preheated oven 20 minutes, until set. Cool before cutting into squares.

HOT FUDGE PUDDING CAKE
1 ¼ cups granulated sugar, divided
1 cup flour
½ cup cocoa, divided
2 tsp. baking powder
¼ tsp. salt
½ cup milk
1/3 cup butter or margarine, melted
1 ½ tsp. vanilla extract
½ cup packed light brown sugar
1 ¼ cup hot water
1. Heat oven to 350 degrees
2. Stir together ¾ cup granulated sugar, flour, ¼ cup cocoa, baking powder and salt. Stir in milk, butter and vanilla; beat until smooth. Pour batter into ungreased 9 inch square baking pan. Stir together remaining ½ cup granulated sugar, brown sugar and remaining ¼ cup cocoa; sprinkle mixture evenly over batter. Pour hot water slowly over top . Do not stir.
3. Bake 35 to 40 minutes or until center is almost set. Let stand 15 minutes; spoon into dessert dishes, spooning sauce from bottom of pan over top. Serve warm with ice cream.

quick and easy? or elaborate?
a quick and easy one that any one can make is taking a couple scoops of strawberry icecream, and drizzing hot melted chocolate or sprinkling chocolate shavings over it, and then stick a couple shortbread cookies (or basic vanilla sugar cookies) on the sides. quick easy and really delicious.
an elaborate one that i love is white, dark chocolate and macedamia nut cookies.
take your basic chocolate cookie recipe and ad dark, milk, and or white chocolate chips and macedamia nuts.
