Does anyone has a recipe to bake cookies for diabetics?

Applesauce - Raisin Cookies

1/4 c Vegetable oil
1/4 c Sugar
1 Egg
1 Ts Vanilla
1/2 c unsweetened applesauce
1/2 c Whole wheat flour
1/2 c Unbleached flour
2 Ts Baking powder
1/2 Ts Baking soda
1 Ts Cinnamon
1/8 Ts Cloves
1/2 c Rolled oats
1/2 c Raisins - dark or golden

Cream the oil and sugar together. Add the egg and beat until light. Blend the vanilla and applesauce. Stir the flours, baking powder, baking soda, cinnamon, cloves, oats, and raisins into the creamed mixture. Blend well. Drop by teaspoonfuls onto lightly oiled baking sheets. Bake at 375º for 10 minutes, cool on a wire rack.

Tell you dad to read the book "21 days to a healthy heart" I got mine off of amazon for really cheap and they have other copies. It opened my eyes! It doesn't sound like a book for diabetics but it is and actually I recommend it to anyone! The author is Alan L. Watson. In the mean time he should NOT be eating any refined sugar at all! Nor should he eat any white flour or anything made with white flour. If you want to have something to share try some healthy lower glycemic index fruit salad to him. Cherries and grapefruit are the lowest, then pears, plums, apples, oranges and grapes. Bananas are high as is watermelon. You can use real whipped cream for blending it together perhaps but don't add sugar to it. Best wishes to your dad! Oh and Im sorry I forgot you are a vegan so the cream is out but just try the fruit then Im sure it will be great.

Oatmeal Chocolate Chip Cookies

Source: Diabetes Management Magazine.

1/3 cup margarine, softened
1/2 cup firmly packed brown sugar
1 egg
3 teaspoons vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup quick cooking rolled oats
1/3 cup semisweet chocolate chips

Preheat oven to 375 degrees F.

Beat margarine at medium speed with an electric mixer until light and fluffy; gradually add brown sugar and beat well. Add egg and vanilla, beating well.

Combine flour, baking soda and salt. Gradually add flour mixture to margarine mixture, mixing well. Stir in oats and chocolate chips.

Coat cookie sheets with cooking spray. Using 2 teaspoons, drop dough onto cookie sheets, leaving about 2 inches between each cookie. Portion the dough so that you make about 3 dozen cookies. Bake 10 minutes or until light brown. Store in airtight container.

Yields 3 dozen cookies.

Serving size: 2 cookies. Exch:1 starch, 1/2 fat, 1 carbs

Cooking.com on the net and Epicurious.com are two good websites for recipes that are sugar free. Just remember you need to respect the exchanges to maintain the diet for the the diabetic.

Almond sugar cookies

5 tb Margarine (75 g)
1 ½ tb Fructose** (22.5 ml)
1 tb Egg white (15 ml)
¼ ts Almond, vanilla, or lemon extract (1.25 ml)
1 c Unbleached flour (125 g)
⅛ ts Baking soda (.6 ml)
1 pn Cream of tartar
32 ea Almond slices
**Substitute 4 pkts. saccharin or 8 pkts. aspartame or 4 packets acesulfame-K for the fructose. It will not change the exchanges.

Applesauce bar cookies

¾ c Sifted cake flour
½ ts Baking soda
1 ts Cinnamon
½ ts Allspice
⅛ ts Cloves
½ ts Salt
¼ c Margarine
¾ c Sugar
1 Egg
½ c Unsweetened applesauce
½ c Raisins

Preheat oven to 375 F. Prepare bottom of a 11 x 7 ~inch pan with vegetable pan coating. Sift together flour, baking soda, spices and salt. Cream together margarine and sugar. Add egg to margarine mixture and beat until light and fluffy. Alternately add the dry ingredients and applesauce, stirring just enough to blend well. Add the raisins. Turn into the prepared pan and bake about 30 minutes. Let cool for 10 minutes then cut into 24 squares. 1 serving = 1 cookie = 1 bread exchange plus 1/2 fat exchange.

You take any favorite recipe and use Splenda in place of the sugar. I was really amazed it tasted just like a cookie made with sugar.

if you are diabetic, you need to just start crying right now and give up on the whole idea of having cookies. this is the kind of thinking that got you here in the first place.
