American Fudge Cake


This recipe is also known as ‘Death by Chocolate’, if it is topped with chocolate ice cream and lashings of whipped cream.



FOR THE CAKE
125 g (4 oz) butter
225 g (8 oz) dark soft brown sugar
2 eggs
142 ml (¼ pint) soured cream
175 g (6 oz) plain flour
5 ml (1 tsp) baking powder
2.5 ml (½ tsp) bicarbonate of soda
50 g (2 oz) Cadbury Bournville cocoa

FOR THE FILLING
40 ml (2 Tbs) Cadbury Bournville cocoa
125 g (4 oz) butter
150 g (5 oz) icing sugar, sieved
Vanilla essence

FOR THE FROSTING
200 g bar of Cadbury Bournville chocolate
40 ml (2 Tbs) Cadbury Bournville cocoa
142 ml (¼ pint) double cream

Two 20 cm (8-inch), shallow cake tins, greased and base-lined

For the cake, cream together the butter and sugar until the mixture is light in colour anti texture. Gradually beat in the eggs, and then the soured cream (the mixture looks curdled at this stage). Sieve together the dry ingredients and fold them into the mixture. Divide the mixture equally between the tins. Bake at Gas Mark 5/190ºC:/375ºF for 30 – 35 minutes, until cooked. Turn out on to a wire tray to cool.

Make the filling by mixing the cocoa with 40 ml (2 Tbs) of boiling water to a smooth paste, allow to cool. Beat together the butter, sieved icing sugar and essence, until light and fluffy. Beat in the cocoa. Slice the cake in half and then sandwich the halves together with the filling.

For the frosting, melt the chocolate carefully. Make the cocoa into a paste with water as before and mix with the chocolate. Slowly whisk the cream into the chocolate until smooth and thickened. Spread the frosting evenly over the cake with a palette knife.

Serve in slices, with whipped cream or ice-cream. If possible warm each slice in a microwave or oven, if you have made the cake in advance; it can also be served cold but is definitely more interesting hot, with the contrast of ice cream.

Listen to me!! :-) The best chocolate cake you can make comes out of a packet, honest! Betty Crocker's "Devils food cake mix". Filled and covered with Betty Crocker chocolate fudge, is SO moist and lush. Just try it, you won't be disappointed.

To Die For Chocolate Mocha Cake

1/2 cup cocoa
1 tablespoon instant coffee
2/3 cup boiling water
8 tablespoons reduced-calorie margarine
1 1/2 cups sugar
1/4 cup honey
1 egg yolk
1 teaspoon vanilla extract
1 cup lowfat vanilla yogurt
1 tablespoon cornstarch
2 cups flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
2 egg whites
1 pinch cream of tartar

***GLAZE***

1/3 cup cocoa
1/4 cup evaporated skim milk
1 cup confectioner's sugar
1 teaspoon vanilla extract

Preheat oven to 350 F. Spray a 9" tube pan with nonstick spray and dust with flour. In a large bowl, mix the cocoa, coffee and boiling water; add the margarine and stir until melted. Stir in the sugar, honey, egg yolk, and vanilla until blended. In another bowl, combine the cornstarch with 1/4 cup yogurt, then stir in the rest of the yogurt. Add to chocolate-honey mixture.

Sift together flour, baking soda and baking powder and add to the wet mixture. Stir well.

With an electric mixer, beat the egg whites until frothy. Add the cream of tartar and continue to beat until stiff. Fold the egg whites gently into the batter. Pour the batter into the pan. Bake for 45-55 minutes or until a toothpick inserted comes out clean. Cool for 30 minutes on a rack. Unmold and cool to room temperature. Combine all the glaze ingredients in a bowl. Mix thoroughly and let stand 5 minutes. Spread the glaze over the top of the cake.

To Die For" Chocolate Cake Ingredients:

1 box german chocolate cake mix
1 8oz hot fudge ice cream topping sauce
1 8oz tub cool whip
1 can eagle brand condensed milk
3 heath or scor candy bars, crushed




Directions
Prepare and bake cake mix as directed in 9x13 pan. Let cool. Using the handle of a wooden spoon, punch holes in the cake. Pour the eagle brand milk over the cake and into the holes. Spread on the hot fudge topping; Top with cool whip. Sprinkle on the crushed candy bars. Keep in refrigerat

Chocolate Sponge cake with coffee + Rum butter cream filling.

3 Tbls Cocoa powder (sieved) in a bowl. Pour 2 - 3 Tbls Boling water on cocoa and mix to a paste. Add 3 eggs and 2 tsp Baking powder - beat vigorously. Add 6oz self-raising flour, 6oz soft margarine, 6oz caster sugar. blend thoroughly. Split mixture between two well greased 7" baking tins and cook for 30 mins in pre-heated oven at 180oC (Gas Mk 4).

In meantime in another bowl add 6oz Icing sugar to 2oz soft margarine. In a cup place 1Tsp Instant Coffee granules. Pour 4tsp boiling water onto granules and stir until fully dissolved - add to icing sugar in bowl. Add small quantity of Rum to bowl and beat vigorously until mixture is stiff and forms 'peaks'.

When sponge is cooked and left to cool thoroughly - spread 2/3 of icing mix onto one of sponges. Place 2nd sponge on top. With remaining icing - spread over top of sponge. Sprinkle 100s & 1000s onto icing and finish off with a further 1 tsp of Icing sugar in a sieve and shaken over sponge.
