Masoor Dal

2 cups red lentils
1 teaspoon salt
5 cups water
1 tablespoon olive oil
3/4 teaspoon turmeric
3/4 teaspoon ground cumin
3/4 teaspoon coriander
3/4 teaspoon ground ginger
3/8 teaspoon cayenne
1 teaspoon mustard seed

Rinse red lentils and place in pot along with salt and water. Bring to a boil, then reduce heat and simmer until completely tender, about 30 minutes. Heat a skillet over medium heat and add oil, then add all of the spices and cook over medium heat until the mustard seeds begin to pop. Slowly spoon the cooked lentils (water and all) into the skillet with the spices (be careful, it will spatter ), and stir to mix. Simmer gently, stirring often, until dal is thickened to the consistency of refried beans. Serve hot. About 6 servings.
