Because of water. Our skin can let the water seep in if exposed to water for longer times. This water remains inside the skin cells for sometime.... till that time the skin remains wrinkled. As soon as the excess water is carried away by the blood vessels it reverts back to normal.
You could try this.... apply thick coat of vaseline on one hand but not on the other. immmerse your hands in water for sometime. You will notice that hand coated with vaseline will take longer to wrinkle than the uncoated one. This is because vaseline acts as a barrier between the skin and the water.

due excess of water our toe and fingers absorbs water and becomes very soft and hence wrinkles

Actually a good sign. When you get those wrinkles, it means that the nerves in those areas are healthy.
