Perhaps those were the animals that Darwin spoke of that evolved from the sea creatures. They definitely had enough water to do so, plus the bacteria from all of the vegetarean animals feces, could have certainly produced something after being underwater for that length of time.
While most people are familiar with only terrestrial snails,(of the earth), the majority of snails are not terrestrial. Snails with lungs belong to the group Pulmonata, while those with gills form a paraphyletic group.

I am not sure the bible says male and femail but pairs of animals I will cheek that out but I do not think its important in this context
Genesis 7
1 The LORD then said to Noah, "Go into the ark, you and your whole family, because I have found you righteous in this generation. 2 Take with you seven [a] of every kind of clean animal, a male and its mate, and two of every kind of unclean animal, a male and its mate, 3 and also seven of every kind of bird, male and female, to keep their various kinds alive throughout the earth. 4 Seven days from now I will send rain on the earth for forty days and forty nights, and I will wipe from the face of the earth every living creature I have made."
5 And Noah did all that the LORD commanded him.

Hermaphrodites don't breed. They're caused by genetic anomolies. So it doesn't matter how many perfectly built people you have on the planet, you'll at least have a few of em without any help.

“And Noah went forth, and his sons, and his wife, and his sons' wives with him: / Every beast, every creeping thing, and every fowl, and whatsoever creepeth upon the earth, after their kinds, went forth out of the ark.”
There are different versions of this part of Genesis . . . but the import is that he was supposed to take "whatsoever creepeth upon the earth" and that would include Hermaphrodites.
