I need the fattening recipes and low-fat recipes as well please. Thanks!

Here's the regular way-
Boil noodles, set aside.
Put about 3 tblsp. and 1/4 cup butter in sauce pan.While stirring with a wisk, heat on med.low till just bubbly.
Add 2 cups milk, continue heating and stirring. Sauce will thicken.
Throw in a little dry mustard, about 1/4 to 1/2. tsp.
Add 2 cups cheese. Any kind. I like Colby- Jack. It melts best.
Keep stirring intill all blended and thick.
Combine sauce and noodles in casserole dish and bake 1/2 hour to 45 mins..
Low fat way? Use lowfat cheese and lowfat milk.

8 oz. cooked & drained whole wheat
pasta elbows or shells or penne
1 1/2 c. low-fat cottage cheese
2 oounces feta cheese
3/4 c. no fat sour cream
1 can evaporated skim (no fat) milk
1 c. shredded low fat sharp cheddar
(or veggie cheddar cheese)
salt and freshly ground pepper to taste
2 egg whites & 1 whole egg
2 Tbsp. grated fresh onion
1 tsp. Worchestershire sauce
1 tsp. dry mustard
1/4 tsp. ground white pepper
3 Tbsp. Fresh grated parmesan cheese
Paprike for sprinkle topping

1. Preheat oven to 350 degrees and spray 2 quart casserole.
2. In food processor blend cottage cheese, eggs, powdered cheese & sour cream.
3. Transfer to bowl and add all but macaroni and paprika.
4. Stir in macaroni. Correct for salt and pepper. Sprinkle top with paprika.
5. Put baking pan with 1" of boiling water in oven. Set casserole inside this pan. Yes, it's like making a custard, but if you don't do this it won't win the blue ribbon!
6. Bake covered for 30 minutes, then uncover and bake until done -- about another 30 minutes. Test with a clean butter knife for "doneness".

Old-Fashioned Mac & Cheese

1 (8-ounce) package dried elbow macaroni, cooked
3 cups (12 ounces) shredded Cheddar cheese, divided
2 large eggs, lightly beaten
1 1/2 cups milk
3/4 teaspoon salt
1/8 teaspoon ground white pepper
Freshly ground black pepper (optional)

Layer one-third of macaroni in a lightly greased 2-quart casserole; sprinkle with 1 cup cheese. Repeat layers with remaining two-thirds macaroni and 1 cup cheese, ending with macaroni layer. Reserve remaining 1 cup cheese.

Combine eggs and next 3 ingredients, stirring with a wire whisk or fork until blended. Pour egg mixture over macaroni. Cover and bake at 350 for 45 minutes or until thoroughly heated. Uncover and sprinkle with remaining 1 cup cheese. Cover and let stand 10 minutes before serving. Sprinkle with freshly ground pepper, if desired.

Start with a bechamel sauce, and add a good sharp cheese. Or even a jarred alfredo, with some added cheddar. This is a tough one to lower calories on. I suppose a low-fat butter substitute, some veggies (onions, carrots, broccoli, and mushrooms), and a healthier pasta.

Don't know about healthy recipe but I have a great fattening recipe. Make white sauce, depending on thickness of sauce desired: 1 tbsp. butter/1 tbsp flour - thin, 2 tbsp. butter/2tbsp. flour - medium, 3 tbsp. butter/3 tbsp. flour - thick. Melt butter in pan on stove, add flour and whisk. Add 1 cup milk and whisk until thickened. Add 2 cups grated old cheddar and whisk until melted and blended together. I sometimes add garlic powder or onion powder.

you can use cheddar and monterey jack cheese, and add some milk and butter, mmmmmmmmmmmm
