The 2003 Passat Automatic Gearbox, tiptronic or no?...Typically it has a large allen headed bolt, I think it's a 17mm, located in the bottom of the transmission pan,remove the allen plug. With the vehicle on a level surface,and the transmission at the specified temperature, you fill the trans through this hole, with engine running, until the fluid pours out. This hole contains a tube that sits above the bottom of the pan and sets the proper level of fluid. By the way the drain plug is usually a smaller allen headed plug, also on the bottom of the tranny pan.
To properly perform this procedure you need to be able to read transmission fluid temp, and usage of proper fluid.
You could do it if you had a vw compatible scanner, proper fluid, adapter nozzle, a bottle to contain this fluid, clip it onto the hood for gravity feed, and a level surface were all this can go on with engine running.

My first guess when you said it was a 2003 was it is probably a sealed transmission. You may not be able to service this gearbox. You really should take it to the dealer to have a proper service done on it. Your VW will love you for it.

I don't know about your VW, but many fords have a fluted top to the gearbox dipstick tube, bit like a funnel and you fill and check the level from here.

Does the Gearbox have a dip stick?
If so top it up using a small funnell through the dipstick hole.

You fill it thru the automatic transmission dipstick hole. You need a long skinny funnel.

not sure about volkswagens, but in my car i just had to unscrew a screw on the tranny and just run one of those home depot plastic tubes to a funnel, but this was on a manul tranny. others ive seen have a tube through the engine bay that says transmission oil on it, like in my dads automatic dodge.
