BHINDI SABJI

1 lb Fresh okra
3 tb Ghee
1 1/2 tb Coriander
1/2 ts Cumin
1/2 ts Hungarian paprika
1/2 ts Garam masala
1/2 ts Turmeric
1 ts Salt

Wash & thoroughly dry okra. Trim the bottom & top &
slice into rounds half an inch thick.

In a large skillet, heat the ghee & add the okra in a
single layer. Cook over a moderate heat for 20
minutes. Stir occasionally. Add the spices &
continue to stir & fry till the okra is golden brown.
Remove from the heat, sprinkle with salt & serve.

There's tons of recipes out there for all kinds of fantastic salads, but this is one I've made many times, that made me look like a rock star, but is so simple. A head of cauliflower, a head of broccoli, cut into bite size pieces, a bag of grated cheese (whatever you like), and a bunch of ranch dressing. It takes a lot, there's lots of nooks and crannies in those veggies. Let it sit for an hour or so.

A vegetarian cook book by Tarla Dalal or Sanjeev Kapur would be of help to you as you can see the decoration and read at leisure . Use your imagination to get that personal touch, dont just copy the recipies .

2 oranges, sectioned
2 bananas, sliced
2 Red Delicious apples, sliced
2 pears, sliced
1 c. seedless grapes
1/4 c. orange juice

Toss all ingredients gently and serve with butter cookies. Sometimes mom tops it with whipped cream, vanilla ice cream or powdered sugar.

FRUIT ICE (GREAT FOR INDIVIDUAL SALADS
OR AFTERSCHOOL SNACKS)

17 oz. can of apricots, drained but save liquid
15 1/2 oz. can of crushed pineapple, drained but save liquid
1/2 c. sugar
3 (10 oz.) pkg. of frozen sliced strawberries
6 oz. cans of frozen orange juice
3 tbsp. lemon juice
3 lg. bananas

Combine 1 cup of the fruit liquid and sugar. Heat until sugar is dissolved. Add strawberries, orange juice and lemon juice. Cut up the remaining fruit and add. Pour into muffin tins that are lined with the heavier cup cake liners. Freeze.

1 (16 oz.) can cut green beans, drained
1 (16 oz.) can cut wax beans, drained
1 (16 oz.) can kidney beans, drained
1 c. cooked and drained lima beans
1 c. drained can whole kernel corn
1 c. sliced carrots
3 med. onions, chopped
2 med. green peppers, chopped
1 c. vinegar
1 c. sugar
1/2 c. vegetable oil

Combine vegetables in a large bowl, toss lightly. Combine vinegar, sugar and oil bring to a boil. Pour hot marinade over vegetables. Stir. Cover and chill overnight.

1 pt. vegetable oil
1 pt. red wine vinegar
1 lb. sugar
1 tsp. Lawry's season salt
1 tsp. black pepper
1 tbsp. garlic powder
1 tsp. basil
2 tbsp. parsley flakes
Cauliflower
Broccoli
Cucumbers
Tomatoes
Carrots
Red onions
Mushrooms
Celery

Combine all ingredients, pour over bite size vegetables. Let stand 4 hours. Refrigerate.
