8 oz sour cream
8 oz no-dairy whipped topping
1/3 cup sugar
1 graham cracker pie crust
Soften the Cream cheese in the microwave and mix thoroughly with the
sugar. Add the sour cream. Once they are well-blended, add the
whipped topping. Mix. Spoon into the graham cracker pie crust and
chill for at least an hour. This goes well with fresh fruit slices on
top or a can of cherry or strawberry pie filling spooned over each
slice.

Well my older sister bakes some really good cheesecakes but I will give you this recipe.

Best No-Bake Cheesecake

Original recipe yield: 1 - 8 or 10 inch round cheese cake.

INGREDIENTS:

* 1 1/2 cups graham cracker crumbs
* 1/3 cup packed brown sugar
* 1/2 teaspoon ground cinnamon
* 1/3 cup butter, melted
* 2 (8 ounce) packages cream cheese
* 2 teaspoons lemon juice
* 1 pint heavy whipping cream
* 1/3 cup white sugar
* 1 (21 ounce) can cherry pie filling

DIRECTIONS:

1. In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press into the bottom of an 8 or 10 inch springform pan. Chill until firm.
2. In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff. Pour into chilled crust, and top with pie filling. Chill several hours or overnight. Just before serving, remove the sides of the springform pan.

a lot of no-bake cheesecake is available online. i'm not keen on baking too... i've tried a few recipes and this is my favorite:

INGREDIENTS
Crust:
1 cup MY San Grahams Chocolate, crushed (1 cup = 10 crackers)
8 tablespoons butter or margarine, melted (225g block = 16 Tbsp)
3 tablespoons sugar
Filling:
1/2 box cream cheese, room temperature
1/4 cup confectioner’s sugar
1/2 cup all-purpose cream, chilled (1 cup = 250 ml brick)
1/2 teaspoon vanilla
1 cup fresh strawberries, sliced thinly
1/3 cup strawberry jam

PROCEDURE
1. DO CRUST. In a bowl, combine crushed MY San Grahams, butter and sugar. Press onto the bottom of an 8x8 pan. Set aside.

2. DO FILLING. Beat cream cheese and confectioner’s sugar until light and fluffy. Add vanilla and mix. In a separate bowl, whip all-purpose cream until thick. Add whipped cream to the cream cheese mixture.

3. LAYER. Pour filling into prepared piecrust. Arrange sliced strawberries on top of filling. In a small saucepan, heat strawberry jam, and lightly brush over strawberries.

4. CHILL and serve.

* 1/3 cup white sugar

* 1/2 cup heavy whipping cream, whipped
* 1/2 cup sliced fresh strawberries (optional)

DIRECTIONS:

1. In a bowl, mix together crushed cookies and graham crackers with melted butter and the 3 tablespoons sugar.
2. Press into a 7 inch springform pan. Place in refrigerator until ready for use.

Ingredients
1-1/2 cups HONEY MAID Graham Cracker Crumbs

1/2 cup (1 stick) butter or margarine

1/4 cup granulated sugar

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

2 cups powdered sugar

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Strawberry jam, heated

Blueberries


Preparation
MIX crumbs, butter and granulated sugar. Press onto bottom of 13x9-inch dish.

BEAT cream cheese and powdered sugar with electric mixer on medium speed until well blended. Gently stir in whipped topping. Spoon cream cheese mixture over crust. Refrigerate 1 hour or overnight.

PRESS star cookie cutter lightly into top of cheesecake. Drizzle warm jam to cover remaining surface of cheesecake. Carefully remove cookie cutter. Arrange blueberries around edge of cheesecake.

1 large package instant chocolate pudding prepared according to directions

Mix together crushed oreos and butter; press into 9 x 13 pan. Blend cream cheese and powdered sugar together; add 1 container Cool Whip and spread on top of crust. Layer prepared pudding over cream cheese layer. Top with remaining Cool Whip. Garnish top with reserved cookie crumbs that have not been mixed with butter or grated chocolate. Refrigerate.
