i like the one i had in popeye's

Just make basic mashed potatoes with lots of butter and make some gravy and add some Cajun seasoning to it. I like to add Emeril's Essence. Here's the recipe:

5 tablespoons sweet paprika
1/4 cup salt
1/4 cup garlic powder
2 tablespoons freshly ground black pepper
2 tablespoons onion powder
2 tablespoons cayenne pepper
2 tablespoons dried oregano
2 tablespoons dried thyme

Combine all the ingredients in a small mixing bowl and blend well. Store in an airtight container in your spice cabinet for up to 3 months.

I don't know if you would call this Cajun or not and I've never eaten at a Popeye's. I put crab boil in the water when I boil the potatoes and then let them soak in the water for an additional 30 min. Drain water. Add as much butter or margarine as you like and just enough milk to make them creamy. Salt and Pepper to taste if desired. If you want hotter potatoes let the potatoes soak longer in the crab boil/water.

CAJUN MASHED POTATOES

3 lb. sm. red potatoes
1 (3 oz.) Rex crab boil
1 tbsp. Rex cayenne pepper
1/2 tbsp. salt
1/2 c. half & half
2 tbsp. butter

Boil potatoes with crab boil, red pepper and salt until tender. Drain and mash potatoes with a fork. Cream with skins on with a hand mixer on high while adding half & half and butter.

Cover it with Crawfish Gravey and Cayenne pepper.

get mashed potatos and put cajun sauce ontop of it? go to safeway or something.....
