This was a recipe that used to be on the side of the Quaker Crunchy Corn Bran box. It's a killer muffin, and I've made it all the time - my kids love it. But now, the new boxes of the cereal don't have that recipe on it! If anyone has the recipe, it would be greatly appreciated - I can't find it in any internet searches. Thank you!

Corn Bran Low Fat Hawaiian Carrot Muffins

(1 cup) all purpose flour
(1/2 tsp) salt
(1/2 cup) brown sugar, packed
2 eggs
(3/4 cup) Quaker® Corn Bran cereal, finely crushed
[start with (2 cups) of whole Corn Bran Cereal]
(1 cup) grated carrot
(1 tsp) baking powder
(1 cup) crushed pineapple and juice
(1 tsp) baking soda
(4 tsp) vegetable oil
(1 tsp) cinnamon

Instructions:
Combine flour, brown sugar, Quaker® Corn Bran cereal, baking powder, baking soda, cinnamon and salt in a large bowl. Mix together. Beat eggs in a mixing bowl until frothy. Mix in grated carrot, pineapple and vegetable oil. Pour into dry ingredients. Mix until dry ingredients are moistened. Fill paper lined muffin cups 3/4 full. Bake in 190°C (375°F) oven for 18-22 minutes. Remove from oven, cool 5 minutes then remove from pan.

Yield: 12 muffins.
