Instead of a sandwich, how about graham crackers and peanut butter. Do you have a microwave? Soup or you could make extras from dinner and have the next day.

I really like to make homemade soup, and then take some nice crackers with cheese and a salad for lunch the next day. Also, chili and cornbread reheat well and are good. I also like to change things up a bit and take pasta salads - those are easy - just take whatever meat, vegetables and cheese you have on hand, and toss them with cooked pasta and some oil and vinegar or Italian dressing. For something simple but a little different from a regular sandwich, take some bagged salad mix, shredded cheese, and sliced salami, layer it in a sun dried tomato wrap that you've spread with garlic and herb spreadable cheese, and fold it up. Very good with some frozen grapes and yogurt. :)

Catch a different bread as it goes on sale

Have tried changing what you put on your sandwich? Try a
bagel with ham & cheese, or pita bread with your chicken salad or Roast beef/bean sprouts (I like that with Ranch dressing), or a tortilla with Peanut Butter & Jelly . Or try Pumpernickel fresh-baked bakery style or even a Croissant (with turkey/ham/cheese in a club style). Change the Cheese, Try a new type of Leafy lettuce, such as spinach or kale and try to use other healthy foods like bean sprouts, or small shredded carrots or even the bag salad mix to make the Sandwich yummy tasty, healthy, and visually appealing.
If you still like your pickles and tomatoes, try the bite-size dill pickles or spears and try cherry or grape size tomatoes with other veggies instead of bringing fruit
If none of these options appeal to you, try making a fruit salad and having a meat, cheese, and cracker snack as your side dish and drinking flavored water or a light tea.
Also try making a light homemade soup and you can use veggies, for this with or without meat. Bring your favorite bakery bread instead of crackers to go with it (Favorite recipes at Allrecipes.com which gives real review ratings from 0-5 stars)
