Sour Cream Chicken Enchiladas
Ingredients
(6 servings)
12 Corn tortillas
4 c Green chile sauce
3 c Minced, cooked chicken
1 lb Jack cheese, grated
1/4 c Minced onion, (optional)
16 oz Sour cream
Salt to taste
GREEN CHILE SAUCE:
1/4 c Olive oil
1 Clove garlic, minced
1/2 c Minced onion (optional)
1 tb Flour
1 c Water
1 c Chopped green chiles
Salt to taste
Instructions
To Prepare Green Chile Sauce: Saute garlic and onion in oil in a heavy saucepan. Blend in flour with a wooden spoon. Add water and green chile and mix well. Add salt. Bring to a boil and simmer, stirring frequently for 5 minutes.
Heat tortillas on a hot griddle and keep warm under a towel or heat in oil, drain on paper towels and keep warm. Mix one cup chile sauce with the chicken. Put 1/4 cup of the mixture on each tortilla and roll it up. Place in a baking dish, cover enchiladas with grated cheese and add onion if desired. Pour remaining sauce over enchiladas and bake at 350 Deg F for about 20 minutes. Smother with sour cream and return to oven for 10 minutes or until all is hot. Serve immediately.

CHICKEN ENCHILADAS
6 chicken breasts, cooked, cut into 1" pieces
1 onion
2 tbsp. butter
2 16 oz cans Old El Paso Enchilada sauce
1 4 oz can tomato sauce
16 white corn tortillas
2 c. cheddar cheese, combined with 2 c. Monterey Jack cheese
1 chicken bouillon cube (in 1/4 cup liquid)
1 c. stewed tomatoes
1 tsp. garlic powder
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. chili powder
Slice the onion and saute in garlic and butter. Add the dissolved bouillon cube, tomatoes, Enchilada sauce, herbs and seasonings. Simmer over low heat.
Fry the tortillas in 375 degree oil for a short period (about 1 minute).
Remove tortillas and drain on paper towels. Dip in sauce when cooled.
Fill each with chicken and cheese and roll up, placing seam side down in 9 x 13 x 2 inch pan.
Pour remaining sauce on top and sprinkle with cheese.
Bake at 350 degrees for 30 to 40 minutes.

I just buy everything all together and make layesr in casserole dish, I hat taking time, because those nights kkids screaming husband mad and feet hurt lol. you can get chicken cooked and ground and seasoned, in i think ccalled Lyyods

This is my moms recipe, it is so good! You will love it! It took forever to type this but I just had to share it with you!
Chicken Enchiladas
1 pint sour cream
2 cans of Cream of Chicken Soup (don't add water!)
1 1oz can diced green chilis
2 bunches greean onions, chopped
3 cups cooked diced chicken
shredded monterey jack, and chedder cheese
flour tortillas
Mix sour cream, soup, chilis, and onions. Spread tortillas with a TBSP of mixture and chicken and cheese. Roll up and put in a challow greased 9" x 13" pan. Should be full of wraps. Pour remaining mixture over tortillas.
Bake at 350 degrees for 40 min. Romove sprinkle more cheese on top and bake until cheese is melted.
Enjoy!

INGREDIENTS:
1 tablespoon butter
1/2 cup chopped green onions
1/2 teaspoon garlic powder
1 (4 ounce) can diced green chiles
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup sour cream
1 1/2 cups cubed cooked chicken breast meat
1 cup shredded Cheddar cheese, divided
6 (12 inch) flour tortillas
1/4 cup milk

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
In a medium saucepan over medium heat, melt the butter and saute the green onion until tender (about 3 to 4 minutes). Add the garlic powder, then stir in the green chiles, cream of mushroom soup and sour cream. Mix well. Reserve 3/4 of this sauce and set aside. To the remaining 1/4 of the sauce in the saucepan, add the chicken and 1/2 cup of shredded Cheddar cheese. Stir together.
Fill each flour tortilla with the chicken mixture and roll up. Place seam side down in the prepared baking dish.
In a small bowl combine the reserved 3/4 of the sauce with the milk. Spoon this mixture over the rolled tortillas and top with the remaining 1/2 cup of shredded Cheddar cheese. Bake in the preheated oven for 30 to 35 minutes, or until cheese is bubbly.

Beef Enchiladas
1 lb. ground beef, browned and drained
2 cloves garlic, chopped
1 tsp. ground black pepper
1 tsp. ground cumin
1 green pepper, diced
2 cans Old El Paso Enchilada Sauce
1 pkg. corn tortilla shells
2 cups sharp cheddar cheese
1 tbsp. hot sauce
1 bunch green onions, chopped
1 lg. tomato, diced
Sour cream
Directions:
Brown ground beef; drain. Add garlic, black pepper, cumin, and green pepper; cook an additonal 5 minutes, stirring constantly. Add 1 can of enchilada sauce and hot sauce, and simmer an additional 3 minutes.
Preheat oven to 375°F. Grease a small casserole dish. Add 1 can of enchilada sauce in large bowl. Dip tortillas in sauce and layer into casserole dish. Add layer of meat mixture, then a layer of cheddar cheese. Bake for 15 minutes. Layer top of pie with green onions and tomatoes and bake for an additional 10 minutes. Remove from oven and let sit 3 minutes. Serve with sour cream on top.
