the most well known use would be for tiramisu. however, if you're sick and tired of tiramisu there are other ways that you can use it up...try adding it to whipped cream and use it in desserts, cake fillings, etc. if you prefer something savoury, add it to dishes as you would cream, or spoon it over baked potatos, use it in mousses, or fold it into dips.

TIRAMISU
boiling water
instant coffee
chocolate powder
sugar coated biscuits
mascarpone cheese
condensed milk
In a medium bowl, combine two packages of mascarpone cheese and 1 can of condensed milk.
Add 1/4 cup of boiling water to a small bowl with 1 tablespoon instant coffee. Allow to cool 5 minutes, then dip sugar coated biscuits in the coffee one by one until moistened.
Put 1 layer of the biscuits into a larger ovenproof dish, then spread the cream on top, reserving a portion. Make another layer of the coffee biscuits, then spread another layer of cream.
Finally, put some chocolate powder in a sieve and sprinkle on top of the dish. Place in refrigerator for 45 minutes, then serve.

Easy Tiramisu
INGREDIENTS:
3 egg yolks
1/4 cup white sugar
2 teaspoons vanilla extract
1 1/8 cups mascarpone cheese
24 ladyfingers
1 1/2 cups brewed coffee
1 tablespoon unsweetened cocoa powder

DIRECTIONS:
In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.
Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8x8 inch dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining cookies and mascarpone. Cover and chill 1 hour. Sprinkle with cocoa just before serving.

Black Coffee Mascarpone
4 eggs, separated
3 tablespoons sugar
1 lb mascarpone
2 tablespoons whipping cream
3 tablespoons strong black coffee, cooled
1 tablespoon brandy
2 tablespoons black sambuca (Opal Nera)
cocoa powder (for dusting)
Beat the egg yolks with the sugar, then blend with mascarpone and cream at high speed.
Add coffee, brandy and liqueur.
In separate bowl, beat the egg whites until peaks form.
Gently stir and fold the egg white mixture through the coffee and mascarpone mixture.
Serve in small coffee cups, dusted with cocoa powder, I use white ones, looks nicer!

You can pretty much dollop it on anything sweet...I like to put it on top of hot cocoa and even crumb like type cakes. Makes things a little richer. It is like cream cheese but a little softer and more tangy.

Whip it with some powdered sugar and milk and put it in crepes!! It's delicious, I just made it for my husband's birthday breakfast.
