Stuffed Mushrooms! They are great!

Stuffed Mushrooms

24 large fresh mushrooms, 1 1/2 to 2 inches in diameter
1/4 cup sliced green onion
1 clove garlic, minced (optional, I don't use this)
1/4 cup margarine or butter
2/3 cup fine dry bread crumbs (I use stovetop stuffing)
1/2 cup shredded cheddar or mozzarella cheese

Wash and drain mushrooms. Remove stems. Reserve caps. Chop enough stems to make 1 cup.
In medium saucepan cook stems, onion, and garlic in margarine or butter till tender. Stir in bread crumbs and cheese. Spoon crumb mixture into caps. Arrange mushrooms in a 15x10x1 inch baking pan. (I also sprinkle cheese on top) Bake in a 425 degree oven 8 to 10 minutes or till heated through. Makes 24.

Cheesy Chicken And Broccoli Casserole
You can use whatever kind of noodles you like, elbow, or whatever I personally prefer shells. Cook noodles according to package minus 2-3 minutes, just so they're not too done. while noodles are cooking, cut up about 4 chicken breasts into 1/2" to 1" cubes. Cook in frying pan with whatever spices you prefer, I use hot shot(coarsely ground red and black pepper) Italian seasoning and whatever else I'm in the mood for. Also cook your frozen broccoli or fresh whatever u prefer. When noodles are cooked, strain and pour into large casserole dish, add a couple tablespoons butter, some milk, and 1/2lb to 1lb shredded cheddar, or a mix of cheddar, Monterrey jack or other cheeses, your chicken and your broccoli. Bake in a 350F preheated oven for about 20 minutes stirring once. As you can see I don't really measure anything when I cook and this recipe isn't really defined. You can add your own twist to it. But it is really delicious and so cheesy, my whole family loves when I bring this dish!

Broccoli Salad.

1 large head of broccoli, (or 2 small ones), cut up into smallish florets
1 small red onion, finely chopped
1/2 pound of bacon, crisp fried, drained, and crumbled
1 cup sharp cheddar, grated.

dressing:
1/2 cup mayo or miracle whip
1/3 cup of sugar
1/4 cup white vinegar

whisk dressing ingredients together, prepare salad ingredients, pour the dressing over and toss to coat. Refridgerate at least 30 minutes. Salad is just as good the next day, but bacon is not so crisp.

I have a couple of them but the most requested one is for a carrot cake that everyone seems to love.

Best Carrot Cake Ever

6 cups grated carrots
1 cup brown sugar
1 cup raisins
4 eggs
1 1/2 cups white sugar
1 cup vegetable oil
2 tsp vanilla extract
1 cup crushed pineapple, drained
3 cups all-purpose flour
1 1/2 tsp baking soda
4 tps ground cinnamon
1 cup chopped pecans

1. In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.

2. Preheat oven to 350°F. Grease and flour two 10 inch cake pans.

3. In a large bowl, beat eggs until light. Gradually beat in the white sugar, oil and vanilla. Stir in the pineapple. Combine the flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed. Finally stir in the carrot mixture and the pecans. Pour evenly into the prepared pans.

4. Bake for 45 to 50 minutes in the preheated oven, until cake tests done with a toothpick. Cool for 10 minutes before removing from pan. When completely cooled, frost with cream cheese frosting.

Pickled Eggs. alot of people like them but no one usually thinks to bring them.
My Family's recipe for pickled eggs:

6 hard boiled eggs peeled
1 can beets
1/2C to 3/4C sugar (depending how sweet you want them)
1cup apple cider vinegar
whole cloves

Drain off the beet juice into a measuring cup. Add enough water to make it 1 cup. Put the beet juice with water into a sauce pan add the vinegar, cloves, and sugar. Bring to a boil and simmer until the sugar is dissolved. Layer beets and eggs in a mason jar or any container. Plastic containers may stain. Pour Beet juice mixture over the beets and eggs. Cover and refrigerate for at least 3 days for the eggs to flavor. They are really good after about a week. (if you can wait that long) :) The beets are pickled in 24 hrs.
I don't care for beets but if you don't put them in the jar the eggs don't get as good of a flavor.
Enjoy!

Your onion loaf sounds wonderful. I'm always asked to bring deviled eggs. After hard-boiling eggs, shell, cut in half and scoop out the yolks. I mix the yolks with mayonaisse, Tasty brand salad dressing, onion powder, celery seed, salt to taste and white pepper. After filling the halves, I sprinkle paprika on them (just a touch for color). Very simple and good.
